    You could add some onion and bell pepper and sauté them with the ground turkey.

    Or add some diced zucchini to sauté with the turkey.

    You could also wilt in some fresh baby spinach once the turkey is mostly cooked, just to get it slightly wilted.

Use whatever brand and shell type you like! You can find the Rotel seasoned tomatoes in the same aisle where all canned tomatoes are. Ive heard that Walmart always has Rotel:) Its good stuff!

  • Cook the macaroni according to the package directions in heavily salted water. Drain and set aside. Reserve the pasta pan for later in the recipe.
  • While the pasta cooks: saute the onions and peppers in oil.
  • Add the ground turkey and taco seasonings and saute, crumbling as you cook, or until the turkey is cooked through.
  • Add the frozen spinach and salsa to the turkey, bring to a simmer and cook until the mixture is reduced and thickened.
  • Melt the butter in the empty pasta pan over medium-low heat.
  • Add the cream cheese, cheese, milk, and extra salt to the butter. Cook and stir for 5-6 minutes, or until the cheese sauce is thickened and creamy.
  • Gently fold the mac and cheese and the ground turkey mixture into the cheese sauce until combined. Serve hot with any of your favorite toppings

    This taco inspired mac and cheese is made with ground beef, onion and garlic, seasoned generously with taco seasoning, as well as 2 cups of dry macaroni, beef broth, water, and diced cherry tomatoes. I considered using salsa, but really wanted the taco flavors to come through, rather than the tomato and spice.

    • Ground Beef I prefer to use a ground beef that is at least 85-90% lean.
    • Onion diced and cooked with the ground beef.
    • Garlic for flavor.
    • Taco Seasoning I use some to season the meat as it cooks, and some to add the the cooking liquid to flavor the whole dish.
    • Pasta Choose any small cut pasta you like, but macaroni is the obvious choice. Shells, Farfalle or Rotini all work as well.
    • Beef Broth the cooking liquid for the pasta.
    • Sharp Cheddar Cheese You want to grate this yourself off the block. Avoid the pre-shredded cheese as it contains an anti-caking agent that prevents melting.
    • Cherry Tomatoes I love adding fresh tomatoes to this dish. They add brightness and some acidity that pairs wonderfully with the creamy cheese. Add some to the pasta to cook, and save some for garnishing at the end.
    • Green Onions Thinly sliced, for garnishing.

    How To Make One Pot Taco Mac And Cheese

  • The first steps are to cook the ground beef with the onion and garlic i a large skillet over medium heat. I scooped the meat onto a paper towel covered plate to drain it, but you could also just mop up the grease with some paper towels. Leaving a little bit is ok and just adds to the flavor.
  • Next youll add the beef broth and water, pasta, tomatoes and more taco seasoning. I use taco seasoning a lot and sometimes will make my own. But I often just use a packet seasoning or the Ortega Taco Seasoning which comes in a larger container so you can use as much or as little as you need.
  • Simmer the pasta and meat mixture for about 15-20 minutes. If there is still a lot of liquid in the pan, just turn up the heat a bit and stir the pasta as the liquid evaporates. You want it to be a little saucy when you add the cheese so it will form a nice cheese sauce. Youre going to add a whole bunch of that shredded goodness to the pan and stir it until its nice and melted. Place the lid on the pan for a few minutes to let it melt completely.
  • Once the cheese is completely melted, garnish with diced tomatoes and green onion.

    Begin by preparing your 2 boxes of macaroni and cheese in one pot. In a separate pan, being browsing the ground beef. Drain the excess fat and then simmer the beef in taco seasoning.

    While the taco meat is simmering, add the diced tomatoes. The goal here is to simply warm the tomatoes since they are already cooked. They will heat up easily while the taco seasoning is simmering in the ground beef. So easy!

    Once the macaroni and cheese is done, add it to the taco meat and gently stir it all together. If you have kids who are interested in learning how to cook, this is an excellent recipe for them to help you with! Kids are particularly great at stirring together Taco Macaroni and Cheese over low heat. Theyll feel so accomplished and proud at how everyone loves what they cooked!

    How To Make Taco Macaroni Casserole

    Just because I like experimenting doesnt mean I want to make things harder than they have to be. This taco casserole recipe is super easy to make.

  • To get started you boil some macaroni noodles
  • Brown about a pound of ground beef with some onions and taco seasoning. I like to make my own taco seasoning using chili powder, cumin, and salt but you can also buy a packet of taco seasoning at the grocery store.
  • Once the meat and noodles are ready you add them along with all of the other ingredients, black beans, corn, salsa, sour cream, and cheese to a large bowl and mix everything together.
  • Then you pour the mixture into a greased casserole dish and pop it in the oven. The casserole will bake for about 45 minutes, or until all of the cheese is melted and gooey.
  • What you end up with is delicious taco macaroni that is full of classic Tex-Mex flavors that your whole family is going to love.

    It’s getting to be that time of year!

    Even though it’s warm here again in Colorado, the cold snap we had last week also snapped my brain into thinking about comfort food and fall.

    Maybe it was the foot of snow I hiked through in Rocky Mountain National Park on Friday. Or, it would also be the days getting shorter and the nights getting chillier.

    Let’s just forget the 90-degree temperatures during the day because, whatever the reason, comfort food has definitely been on my mind!

    I can’t stop thinking about hearty bowls of chili, steaming hot curries, casseroles, soups, and — of course– mac and cheese.

    Not that there’s really ever a time that I’m not thinking about mac and cheese! #confession

    But, of course, when I have an excuse like fall to think about it I am going to milk that reason for all it is worth.

    My most recent ponderings have led me to where we are today: taco mac and cheese. Not sure if it’s the childlike subject, or just that I’m that in love, but there are not many other words I have for this dish than… Oh. My. God.

    At least that’s how I’m choosing to spend and celebrate my comfort food season. Let’s dig in!
