How To Make Easy No Bake Lemon Cheesecake

You are going to want to start by letting your cream cheese sit out to soften at room temperature. Do not skip this step! It is key to getting a creamy filling.

Next, start adding your cream cheese and other ingredients to the bowl.

The filling is three ingredients: cream cheese, sweetened condensed milk and lemon .

Next, you are going to beat everything together. You have options here. You can use a stand mixer, a hand mixer or even a blender. I am using a hand mixer to help show you as clearly as possible how to make this recipe and what to expect.

When you start beating the filling, start on low to prevent splashing yourself. Then slowly increase your mixer speed to medium-high. After a minute or so, it will still look chunky, like this.

No worries, friends! Just keep that mixer working a few minutes until it gets creamy like this.

After you get your filling looking creamy, you will transfer it to a graham cracker pie crust. I am using a store-bought one, but feel free to use a homemade one if you prefer.

Use a spatula to smooth everything around.

Then I like to reserve some of the lemon zest to sprinkle on top.

Last, you will want to let it set up in the refrigerator until everything is solid. This process should take at least 3 to 4 hours.

How To Freeze No Bake Cheesecake:

We do not recommend freezing no bake cheesecake to get it to set. The refrigerator is the perfect place to have the cheesecake set.

But you can freeze no bake cheesecake after it has set to the right texture. When we are planning on freezing it, we recommend double layering the cover over the cheesecake.

Place a plastic wrap and then aluminum foil over the cheesecake and make sure it is covered completely. If stored properly the cheesecake will last about 3 months in the freezer.

When you are ready to serve, remove the cheesecake and thaw in the refrigerator and then slice. Delicious no bake cheesecake served anytime of the year.

How Do You Make No Bake Cheesecake From Scratch

  • Mix crumbs and sugar together Add graham cracker crumbs to large bowl. Stir in sugar.
  • Mix crumb mixture with melted butter Melt butter in microwave safe bowl. Stir into crumb mixture until well combined.
  • Press into Pan Press firmly into 9 inch springform pan. Allow the crust to chill for at least 20 minutes. I recommend placing in the freezer.

Now it is time to make that delicious filling!

  • Mix Cheesecake Filling In a large bowl, beat together cream cheese and sweetened condensed milk until smooth and creamy. Beat in lemon juice and vanilla until smooth.
  • Pour into Crust Pour into graham cracker crust and spread evenly.
  • Allow Cheesecake to Chill Cover with plastic wrap and chill until firm 3-4 hours or overnight. Dont skip this part as it has to be chilled in order to set!

1 graham cracker pie crust 1 package cream cheese, softened1 can sweetened condensed milk 1/3 cup lemon juice 1 teaspoon vanilla1 can cherry pie filling

Let cream cheese stand at room temperature until softened. In a medium bowl, beat cream cheese until light and fluffy. Slowly add condensed milk, lemon juice and vanilla, beating until smooth. Pour into crust. Chill at least 3 hours until firm and then top with cherry pie filling. Makes 1 pie.

Why Isnt My Cheesecake Setting

This usually happens for one of three reasons:

  • The wrong type of cream cheese was used. You need dense block-style cream cheese, not the spreadable or whipped cream cheese sold in tubs. Cream cheese blocks can be hard to come by outside North America . In that case, buy full-fat Philadelphia cream cheese.   • The ratios of cream cheese to condensed milk to lemon juice are off. Not enough cream cheese or too much lemon juice, and the mixture wont set but remain semi-liquid. Make sure to measure the cream cheese required correctly.
  • The chilling time was too short. As mentioned before, chilling for 5 to 6 hours is imperative for the cheesecake setting, and overnight is even better.

    Minute No Bake Cheesecake Recipe

    This easy cheesecake recipe goes together quickly, and cant really be messed up.When making this recipe, I recommend buying a brand name cream cheese, I normally use Philadelphia brand, you could use a store brand, but sometimes I find store brand cream cheese makes a runnier cheesecake.

    I make this recipe in my KitchenAid stand mixer. If you dont have a stand mixer, you could make it with a handheld mixer. Once we spent Thanksgiving in a job site trailer in Utah, on my husbands job location, and I made this pie with a fork, it was lumpy but still fantastic.

    Set two 8 ounce bricks of cream cheese out on the counter to soften. I recommend taking them out of the cardboard container. You want the cream cheese to be at room temp, this will make a smoother cheesecake filling. If you are in a hurry and dont care about lumpy cheesecake filling, Ive been there and done that, you can use cream cheese straight out the frig.

    How To Make A No Bake Cheesecake

    No Bake Cheesecake with Condensed Milk ð?ð¨â?ð?³ð¥§

    Start by making your graham cracker crust.

    You can choose to use a prepared crust, but I personally think homemade tastes better. Its so easy too!

    To make your crust, add your full size graham crackers to a food processor and pulse until fine crumbs form. Add in the sugar and melted butter and pulse until blended.

    Divide in half and press crumbs into the bottom of TWO 8 or 9 inch pie plates. Use the bottom of a cup or the heel of your hand to press firmly, making sure the crumbs go up the sides of the pie plate.

    To make the cheesecake filling:

    Beat room temperature cream cheese with sweetened condensed milk and lemon juice for about 4 minutes using an electric mixer. Scrape down the sides of the bowl as needed, and beat until smooth and fluffy.

    Fold in Cool Whip and pour evenly into your pie plates. Use the back of a spoon to smooth the tops of the pie.

    Refrigerate the cheesecakes for at least 3 hours until chilled and set.

    Add your favorite pie filling flavor to the top if you choose! We love cherry but blueberry, peach or strawberry would be delicious on your cheesecake, too.

    Fresh fruit and homemade whipped cream are other good choices for adding sweetness to this dessert.
