Youre welcome to just buy breadcrumbs from the store, but if youre feeling especially industrious, theyre fun to make yourself. All you need is bread, an oven and something to break the bread up with. Could be a food processor or a rolling pin. Or a heavy book. Or your own fists of fury.
Just place the bread slices into a 300°F oven to dry them out for about 15 minutes. Remove them from the oven and either pulse in a food processor or put the slices into a sealed bag and break them up with the blunt-force tool of your choosing.
Sprinkle the breadcrumbs or crackers over the macaroni and cheese until everything is covered. Then place the casserole dish into the oven and bake for about 25 to 30 minutes.

Whisk The Cheese Into The Cream Sauce
Once your milk and heavy cream sauce is bubbling, drop the heat back to low. This is when the magic happens, because now you add the cheese. Latimer advises dividing your cheese into three portions to help with the melting process, and adds, “There is no need to be exact here.”
Stir in the first portion of cheese until it melts, and repeat this for the second and third portions until all of the cheese has been melted into the cream mixture. Once it’s all mixed in and ready, remove from the heat, and mix in the cooked elbow macaroni you’ve already prepared.

How To Make Mac And Cheese
If youve never made homemade mac and cheese before, it can seem a bit daunting. But dont worry, well break it down and take it step by step!
- Boil the pasta, drain.
- Make the cheese sauce by combining a fat , and starch , then whisking in the milk products.
- Cook the sauce until its nice and thick.
- Add in shredded cheeses, stir well.
- Combine cheese sauce with cooked pasta.
- Transfer half of the mac and cheese to a baking dish, sprinkle with more shredded cheese.
- Top with the rest of the mac and cheese, top with more shredded cheese.
- Bake and prepare to thoroughly enjoy!
Cook The Macaroni Till Al Dente
Start by cooking your macaroni. The package will have instructions, but a basic rule of thumb is using a three-to-one water-to-noodle ratio. So, for your 2 cups of macaroni, you want to use 6 cups of water with a pinch of salt added. Bring it to a boil, and cook until the pasta is firm to the bite, also known as al dente. Once cooked, remove the pot from the heat, and pour the macaroni and water into a strainer. Latimer also reminds you to rise it in “cool water this stops the cooking process.” Then, set aside the strainer with the cooked macaroni.

Fortunately, block cheese is quick and easy to grate and preferable to pre-shredded or grated cheese, since those types of cheeses are coated in preservatives, which prohibits that creamy, melty quality we want in our mac and cheese.

- People swear by Velveeta in this recipe, do not use a substitute. Miss Robie herself uses only Velveeta.
- While pre-packaged shredded cheese works fine, grating your own is the better option. It just melts better.
- It’s going to be oily on top after baking, that’s how it is with real cheeses and butter. If you think it’s excessive, blot some up with a paper towel while it rests. I do sometimes.
- Reheats are great, just pop in the microwave.
- This is filling and hearty enough to serve as the main dish but most often it is a side dish. It’s unbelievably good alongside collard greens and fried chicken!

Inside Homestyle Baked Macaroni And Cheese
- Tillamook for this original, I use mount cheddar and sharp cheddar thick cut shredded cheese
- Whole milk I typically use whole milk for this recipe. I like the thickness and the richness that I get from whole milk. You can use half & half that will give it an even thicker consistency. I would not go with 2% or anything less than that.
- Flour all purpose flour is fine. You could also use gluten-free flour if gluten is something that youre sensitive to.
- Worcestershire sauce always gives the little kick of spice that you secretly didnt know that you needed!
- Nutmeg A pinch of nutmeg gives a nice round flavor to the spices.
- Ground mustard another seasoning that gives a rich flavor to the cheese sauce.
- Salt and pepper always key ingredients.
- Paprika Mainly for color!

What Cheese Makes The Best Mac And Cheese
This recipe was prepared for Christmas dinner with my family. I typically use 4-5 different types of cheese. I often use gouda and go back and forth between using gouda and pecorino romano, for no particular reason. I love gouda. I love pretty much any cheese. Feel free to use your favorite types of cheese.
Parmigiano Reggiano is my favorite cheese to use while cooking. I have used it often in other recipes such Shrimp Scampi Dip, Shrimp Scampi with Zucchini Noodles, and Warm Spinach Dip with Parmesan. It adds an amazing bold flavor to the dish.
Variations Of Mac And Cheese
- Bacon if you love bacon, feel free to add some crispy, crumbled bacon to the topping, or even inside the mac and cheese as well!
- Stovetop if youd prefer not to bake this mac and cheese, you dont have to! Make sure you boil your pasta until al dente , and youll only need about 3 3 1/2 cups of cheese total. No need to layer the pasta and cheese, just add all the cheese to the sauce, then combine with the pasta.
- Different Toppings Im a huge fan of the cheese layer on top, since it gets nice and crispy, but we also love tossing 1 cup of panko with 2 Tbsp of melted butter and using that as a topping. 1 cup of crushed Ritz crackers with 2 Tbsp of butter work amazingly well too!
- Different Baking Times the recipe calls for a lower baking temperature and time, but most of the time I find myself adjusting that based on my familys tastes. I like to bake this mac and cheese at 350 F degrees for 30 minutes, then broil for 2-3 minutes to get that glorious cheesy crust.

Making Mac And Cheese Ahead Of Time
- Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
- Before baking, let dish sit on counter for 30 minutes.
- Bake at recipe temperature for 25-35 minutes, until hot and bubbly.
As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.
I would increase the amount of sauce slightly if you need to make this recipe ahead of time.
