With everything thats going during the COVID-19 quarantine, I thought it would be a good time to share how easy it is to upgrade a pantry staple: good ol mac & cheese. Cooking beyond the box couldnt be easier, and Ive even got the video to prove it! I developed this recipe last summer for Thats Tasty. I know that Im a little bias, but make sure to browse their recipe tab when you are looking to make something new!

Making The Cheese Sauce

Make the cheese sauce while the pasta is cooking. The box will indicate how much milk and butter to use. Put this in a pan with the powdered cheese and heat over medium-low to medium heat. Stir frequently. You want to heat it to the point the butter is melted and its fully combined. Next remove it from the heat and add 1 cup of shredded cheese and 1/4 cup of milk. Mix together and set aside for now.

Putting it all together

Once the pasta is done pull the strainer out of the water to drain the pasta.

Pour the pasta into your slow cooker. Pour the cheese sauce over the pasta and mix.

If you need to make another batch of two boxes just repeat using the already hot water.

Keeping the mac and cheese warm

Remember to put the slow cooker on warm. You can do that a little in advance if you want.

How Long To Bake Mac And Cheese

There is only one rule that you need to remember when baking mac and cheese: dont bake it too long otherwise youll bake away the sauce leaving you with a dry mixture.

Baking it at around 20 minutes at 375 degrees F guarantees you that same stretchy cheesy baked mac and cheese with all the heart-melting sauce. Or you can also bake it at 30 minutes at 350 F

How To Make Baked Mac And Cheese

Creamy Baked Mac and Cheese

Add butter to skillet, as soon as butter melts whisk in flour. Continue whisking until flour is fully mixed with butter. Then cook for about a minute to get rid of the flour taste.

Slowly add evaporated milk a little at the time, followed by the half and half you do not want the mixture to form any lumps. Simmer for about 3-5 minutes until mixture thickens slightly.

Add seasonings, onion and garlic powder, creole seasoning and cayenne pepper. Bring to a simmer and let it simmer gently for about 2 minutes. Stir in the cheeses , and continue stirring until everythings melted and evenly combined and, smooth. Salt & pepper, to taste.

Then add the pasta to the pot, stir to evenly incorporate.

Transfer the pasta mixture into acast iron skillet or into a lightly greased 2-qt. baking dish top with remaining cheese.

    Easy Cheesy And Nostalgic

    As crazy simple as it may seem, I will always love boxed mac ‘n cheese. And why not? Easy, cheesy, and nostalgic, it’s the queen of all comfort foods, and something the kids will eat too. I decided to take it up a notch with these crispy mac ‘n cheese balls by adding cheddar and American cheese for extra flavor . You can use canned, pickled, or fresh jalapeños for a little heat, but if you don’t have any of those, try cayenne! Pro tip: If you have a mini muffin tin to bake the mac ‘n cheese balls in, that will help maintain the round shape.
