Buddy Valastro has more than earned the title of Cake Boss. A fourth-generation baker, the New Jersey chef started as a dishwasher in his fathers bake shop and worked his way up to becoming one of the most famous bakers in the country, and has been whipping up extravagant, over-the-top confections for years. Since becoming the star of his own TLC show in 2009, Valastros cake-making business has exploded in size and popularity. What began as the original Carlos Bake Shop in Hoboken back in 1963 has grown to include 16 locations across the country.

    If you come on a weekend, its likely to be crowded. Fortunately, the crowd was happy to be there and didnt seem to mind the wait everyone was polite and civilized.

    Buddy Valastros empire of cake and pastry just got a little smaller, at least in New Jersey.

    When it comes to Bergen and Morris counties, the Cake Boss will not be in, not any more.

    The Ridgewood and Morristown locations of Carlos Bake Shop have closed, confirms Carlos spokeswoman Nicole Valdes.

    The leases at the two locations ended and the company chose not to renew, she tells NJ Advance Media.

    Valastros fleet of Cake Boss bakeries has shrunk by more than just a few crumbs. In August, the bakery chain shuttered another location in Red Bank. That closure followed another in Westfield this past April. There are now three Carlos Bake Shops in the state.

    The Ridgewood location of Carlos Bake Shop, which opened in 2013 in Wilsey Square, was Valastros first foray in New Jersey outside of Hoboken. The bakery has been in operation in the Mile Square City since 1910. Valastros family took over in 1964, when his father, Bartolo Valastro Sr., bought the bakery.

    The company ships confections including rainbow cookies, red velvet cake and cannoli nationwide and sells bakeware on its website.

    Carlos Bake Shops remain open in Hoboken, Wayne and Marlton. The Wayne bakery is located within the Willowbrook Mall.

    To support the companys tremendous growth, Carlos recently opened a 55,000 square foot facility called the Cake Factory at Lackawanna Center in Jersey City, approximately one mile from its flagship retail store in Hoboken. This state-of-the-art building houses all of the companys major baking and cake decorating operations, as well as its business offices and call center.When architecting its Cake Factory, Carlos wanted to build the most innovative facility for baking, and knew that technology would play a critical role.     Buddy Valastro Sr Was The Original Cake Boss Of Carlo’s Bakery

    Residing in Little Ferry, New Jersey, Bartolo Valastro Sr. was a family man a husband and father to four daughters and a son, the youngest. Buddy Valastro Jr. and sisters grew up around cakes and pastries, leading to Buddy Jr. following his father to Carlo’s Bakery as early as 11 years old. At first, our apprentice was washing dishes and cleaning up. On his first day at the bakery, Buddy Jr. says his father made him clean the toilet bowl just to show he wouldn’t be getting any special treatment.

    Soon, he graduated from the bathroom to the kitchen, cracking eggs and moving flour and sugar. Then he started filling cannoli . But despite those early fumbles, it was soon discovered he’d be a fourth-generation baker. Buddy Jr.’s first cake was an Italian rum cake a birthday treat for his mother at age 12.

    But he seemed a natural. “We had less regulations back then, so you could stick your arm in the mixing bowl while it was mixing,” Buddy Valastro told Thrillist. “It was dangerous code, but you knew the rhythm of the way that machine worked. It’s like a musician knowing how to play an instrument.”

    Now, when you check out the remaininglocations of Carlo’s Bakery, you see three weird entries. Toronto is home to three Carlo’s Bakery ATMs. And these are exactly what they sound like.

    In November 2019, Carlo’s Bakery planted three cake vending machines in Ontario one at the Royal Bank Plaza, one at Richmond Adelaide Centre, and another at Waterpark Place. Since each machine is stamped with “Fresh from Carlo’s Bakery,” the vending machines are reportedly re-stocked daily. The ATM vends up to 160 slices, which cost $8.99 each. However, much like the Hoboken location of Carlo’s Bakery, and the many other locations on opening day, the bakery drew lengthy lines of cake fans.

    While these little slice-peddling machines seem a little informal, it was the first time Canadians could buy Carlo’s cake on their own soil. That is, until delivery to Canada started in the summer of 2020. Carlo’s Bakery delivery service in Canada launched on June 22. It was announced via an from Buddy Valastro himself. “I know that my Canadian fans have been asking me for a long time, ‘How do I taste your cakes?'” Cake Boss said. “Well, let me tell you guys, now is the time!”

    Obviously, exposure from Cake Boss resulted in increased business, as in lines out the door at Carlo’s Bakery. In fact, in 2010, the corner of Washington and Newark Streets was renamed Carlo’s Bakery Way. There’s now a line that persists outside of what is now known as the original Carlo’s Bakery .

    How to get from New York City to visit the Cake Boss Carlos Bake Shop in Hoboken

    Most New York visitors dont realize how easy Hoboken is to get to from Manhattan its a quick ride on the Path train .

    Riding the Path train is similar to riding the New York City subway they sometimes even share the same entrances . You dont even need to buy a separate fare card your New York City MetroCard also works on the Path, but is a quarter cheaper per ride .

    Hoboken is filled with charming historic brownstones and is worth a stroll on a nice day.

    When we arrived at Carlos Bake Shop, we were relieved to see no line out front. It didnt take us long to realize why.

    Carlos Bake Shop yes that bakery, the one featured on the wildly popular reality show, Cake Boss was once my neighborhood bakery, back when I lived in a quaint Hoboken townhouse just a few blocks from Frank Sinatras birthplace.
