The Best Asparagus Cooking Time And Temperature

Asparagus is known to have a slightly bitter flavor. There are two typical techniques for eliminating this flavor as much as possible. The first is blanching, but the ultimate method is roasting them in the oven.

The preparation of white or green asparagus differs somewhat. Snap the woody ends of the white ones before cooking them, and always peel the bottoms using a vegetable peeler. Its an essential part since theyre bitter and fibrous, which alters the flavor and cooking time significantly.

Roasting asparagus in the oven takes around 12-15 minutes at 400°F, uncovered, with the oven fan on.

If you prefer to try the other method, blanching, prepare a bowl with water and plenty of ice. Immerse the asparagus in extremely salty, boiling hot water for 2 minutes before tossing them into the ice.

After that, place them in the refrigerator until ready to serve.

The excessively salty water helps them keep their green color and gives an excellent flavor without making the asparagus itself salty. The freezing water quickly stops the cooking, leaving them somewhat ripe.

How Do You Keep Roasted Vegetables Warm

Roasted vegetables taste best when you eat them immediately, straight from the oven. But if youre cooking for a crowd and need to keep them warm for a few hours before serving, place them in your oven drawer or keep them warm in a low-temperature ovenaround 200°F.

Peel like a carrot, beginning just below the tips and extending to the stalk end. Discard peelings or reserve them for stock or another use.
