Preheat oven to 375F degrees. Slice the potatoes into ¾-inch thick rounds. Place the potatoes on a large baking sheet in an even layer. Use a pastry brush to lightly coat the top and bottom of each potato slice with oil. Season with salt and pepper.

Bake the potatoes at 375F for 25 minutes.

While the potatoes bake, cook the bacon in a frying pan over low heat, turning occasionally for even cooking. Once fully cooked and crispy, remove the bacon from the pan and set aside to cool, then crumble once fully cooked keep the bacon drippings for the next step.

Remove the potato slices from the oven and lightly brush on all sides with the bacon drippings. Return the potatoes to the oven and bake for 10 more minutes.

Top the potatoes with grated cheese and crumbled bacon. Place back in the oven to bake until the cheese is melted, about 5 minutes.

Remove the potato slices from the oven, then sprinkle with Italian seasoning and green onions.

  • Preheat oven to 400 degrees Fahrenheit.
  • Place potatoes between 2 knives and slice . Slice horizontally into 1-centimeter sections.
  • Soak potatoes in cold water for 10 minutes .
  • Place potatoes in oven safe skillet.
  • In a small microwave-safe bowl, add butter, garlic, and salt. Heat for 35 seconds or until butter is melted, stir.
  • Brush butter mixture onto potatoes.
  • Cook for 20 minutes.
  • Add parmesan cheese to potatoes.
  • Cook an additional 20 minutes.
  • Serve immediately.

    How To Make My Cheesy Potato Bake:

    Thinly slice the potatoes either by hand or using a mandolin. Mix together the cream and garlic with lots of salt and pepper.

    Cover the bottom of an oven proof dish with one layer of potatoes. Sprinkle over some cheese, then pour over some of the creamy mix. Repeat these layers until you have used all of the potatoes slices.

    Top the dish with grated cheese then bake in the oven for 80 minutes at 190°C. The dish is ready when the potatoes are cooked and the top is golden.

    Scrub the russet potatoes clean and cut into approximately 1/2-inch slices. This is thick enough so they dont shrink down to potato chips, but thin enough so they bake through nicely.

    Brush lightly with olive oil and season with salt and pepper. Bake at 375°F for 25 minutes.

    Meanwhile, cook bacon strips in a large pan over low heat until crispy. Leave the bacon drippings.

    Brush Bacon Drippings on both sides of the potato slices and bake for 10 more minutes.

    Top with shredded cheese and crumbled bacon. Bake for 5 minutes, until the cheese is golden brown.

    Sprinkle with Italian seasoning and green onions. Serve with sour cream!

    Ah the potato. Its one of those foods I cant live without and always I mean forever and always look forward to eating. I love potatoes in all shapes and forms and also love the fact that they are really easy to manipulate.     Its basically a baked potato thats been sliced into thin slits, brushed with butter or oil and topped with your topping of choice.

    This sliced baked potato recipe uses extra virgin oil to make the outer edges crispy like a potato chip, and gruyere for a fluffy and cheesy inside. Yummy yummy! Ive also added fresh chives and rosemary to add rusticity and something refreshing to cut through to heaviness.

    I picked gruyère because its one of my favorite cheeses.

    Make sure you get good gruyère and not the kind sold in grocery stores as the result of this recipe will vary greatly. Its the difference between having an outstanding tasting potato or something mediocre.

    Cheap gruyère is plastic, rubbery and quite plain, while good gruyère cheese has crystalized bits, almost melts in your mouth and has an intense, sweet, nutty and salty flavor. Look for Le Gruyère AOP Reserve, Alpage, or Gruyère Salé all favorites among cheese experts.

  • Preheat Oven: Preheat oven to 425°F.
  • Prep: Line a baking sheet with aluminum foil. Wash the potatoes well. Place a potato on a cutting board between two chopsticks or skewers. Slice the potato into 1/4 inch slices, but do not slide the knife all the way down, the chop sticks should prevent you from doing that. Repeat with remaining potatoes.
  • Assemble: Rub each potato with the olive oil and generously season with salt and pepper. Slice the butter into thin slices and place the butter pieces in between slices of potato. Place the potatoes onto the prepared baking sheet.
  • Bake: Transfer the baking sheet to the oven and bake for about an hour, or until potatoes are cooked through.

    If you know you are making the hasselbacks ahead of time to be reheated later, baked them for an hour, but then take them out of the oven before you add the cheese slices. Reheat them in a preheated 425°d oven for 15 minutes, then slip in the cheese, and bake for the final 5 minutes as direcgted.

    If the cheese has already been added you can still reheat them in the oven for 125 to 20 minutes at 425°, but the cheese will probably get very melty and drip out of the slices. I wouldnt turn my nose up at one of these however, and I would use a spatula to scrape any melted cheese from the bottom of the baking dish and slather it over the top of the hot potatoes.
