    This year is the third year for our asparagus bed. Those little babies have given delicious fresh asparagus – we can now cut it for as long as we want!

    It is hard to believe that we planted the asparagus bed three years ago! There was a lot of preparation for three, forty foot rows!

    The rows were first dug 2 ½ feet deep then about 10 inches of manure were added and drip irrigation was laid – you can see pictures of the actual process in Asparagus Bed.

    Since that experience I have always been extremely diligent to remove every centimeter of the tough, woody part of an asparagus spear.

    But how do you know where to trim it? The answer is quite simple.

    You can take a knife and quickly slice at the junction where the light brown turns to green.

  • Pick up one asparagus spear.
  • Hold the spear in both hands and place your thumb at the junction of the light brown and green part.
  • Press lightly until you can feel where the asparagus is soft versus where it is hard.
  • Continue pressing until the spear snaps. Repeat this process with the remaining asparagus spears.

    In a small bowl, mix margarine and herbs to form a thick paste.

    Lay a large piece of nonstick foil on a baking sheet.

    Line up the asparagus side by side and place the fish on top.

    Spread margarine mixture evenly over the fish and top with lemon slices.

    Season with salt.

    Fold and seal the foil to make a packet.

    Place in oven and bake for 15 minutes.

    Allow to cool before opening.

    There are two ways to trim asparagus:

    • Bend and Break . Hold the top of the stem in one hand and grip it near the base with the other. Briskly bend and the asparagus will naturally snap in the right place. Its almost like magic and very satisfying.
    • Cut the Bunch . Hold the entire bunch of asparagus in one hand and trim off the ends about 1 1/2 inches or so from the bottom.

    While cutting the entire bunch of asparagus at once is fastest, the results do not turn out as well as if you bend and break each spear individually.

    Every stalk of asparagus has a slightly different breaking point where the woody end starts. If you cut the whole bunch at once, youll waste edible flesh of some spears, while missing the woody parts of others, resulting in a few stringy bites.
