How To Store It
Leftover asparagus can be stored in an airtight container in the fridge for up to 4 days.
During the week, I enjoy them chilled from the fridge for lunch or slightly rewarmed when it comes dinner time.
I do not recommend freezing the roasted asparagus. Upon reheating, the spears become waterlogged and mushy.
Can You Eat Asparagus Raw
Absolutely! I love to take a vegetable peeler and add a few raw asparagus shavings to my salad from time to time. Although you CAN eat it raw, asparagus is one of those vegetables that just happens to be even better for you cooked.
Cooking the asparagus breaks down the fiber, which makes it easier to digest and absorb the nutrients. It also increases the antioxidant activity. But whether you eat it raw or cooked you really cant go wrong. Roasted asparagus is the best.

Arrange On A Baking Sheet
Choose a large enough sheet so that all of the spears are in a single layer with none of them overlapping.
Using a rimmed baking sheet will ensure none of the delicious garlic oil runs off into the oven.
Expert Tip: If you want to take it up a notch you can even place the asparagus spears on an oven-safe wire rack. This allows the hot air in the oven to contact the asparagus on all of its sides!
How Long To Bake Asparagus At 375 Degrees
Other than what temperature to cook it at the biggest question you will have is how long to bake the vegetable. This can be done various ways, but foremost in my mind is always not to overcook it. It can quickly become mushy with wet cooking techniques, or dried-out if baked, broiled or grilled too long. Cooking times will vary based on the thickness of the asparagus and of course the cooking temperature. We are looking for a tender spears, yet with a slight snap to them when you take a bite. How Long To Roast Asparagus At 425 Degrees
When making roasted asparagus the only difference in roasting is temperature and cooking time. Of course, higher temps cook the spears faster.
- Narrow asparagus will have a cook time as low as 12 minutes, but more likely closer to 14-16 minutes.
- Thick spears will cook in 15-18 minutes at 425 degrees.
The oven time will vary based on your doneness preference, actual thickness of the spears and accuracy of your oven thermostat.

If you love asparagus as much as we do try my Sauteed Asparagus with Mushrooms, Cheesy Baked Asparagus or Alton Brown’s suggestion and zap your salted spears in the microwave wrapped in wet paper towels for 3-4 minutes. Surprisingly this results in nicely cooked spears. I personally rarely steam asparagus, but it is a nice hack when you need a single side dish serving fast. As far as boiling is concerned… just don’t do it. It’s an affront to the vegetable.
Tip: Line the baking pan with parchment or aluminum foil for easy clean-up.

Oven Roasted Asparagus With Parmesan
Oven Roasted Asparagus with parmesan is a recipe that is almost too good to be true! It is quick, easy and delicious. This is sure to be a family favorite!
This year is the third year for our asparagus bed. Those little babies have given delicious fresh asparagus – we can now cut it for as long as we want!
It is hard to believe that we planted the asparagus bed three years ago! There was a lot of preparation for three, forty foot rows!
The rows were first dug 2 ½ feet deep then about 10 inches of manure were added and drip irrigation was laid – you can see pictures of the actual process in Asparagus Bed.
That was just the prep work!
Then came planting the crowns. I remember opening the box of crowns when it came in the mail and thinking, “What in the world!”.
The crowns looked like a ball of spaghetti noodles that had gone bad – reeeaaallly bad!
I laugh now as I think back to my city-girl naivety! I have learned so much – to put it another way – I’ve come a long way baby!
So, in my anticipation of all the asparagus that is to come, I decided to begin experimenting with ways to cook it.
Last year as we cut asparagus, much of it was eaten raw.
It was delicious but, this year we will be able to harvest a lot more. I am determined to find delicious recipes and not just eat it raw or in scrambled eggs!
I went shopping while I was hungry! You know how it is when you are hungry and in the grocery store – eeeeverrryyyything looks good!
And, I answered!

How Do You Cook Asparagus
There are a few ways you can cook asparagus:
- Bake/Oven roast
Each preparation varies in cooking time and really does come down to the thickness of the asparagus.
One common thing for each cooking technique is you will want to wash the asparagus and then cut the bottom of the stems off. I remember one of my girlfriends showing me the Elle Woods Way as she called it. You literally bend the asparagus and it will snap where it is meant to..on. Its. own. Okay, maybe its not THAT fascinating, but it IS one less thing to do. Tell me thats not a win?!
Roasting asparagus is the best option . But because I love you guys, and I am going to share a few other options:

How Do You Tell If Asparagus Is Good
Asparagus should have a bright green color. The tips should be colorful and look healthy. The spears should all be stiff and hold their shape. There should not be any unpleasant slimy texture. Asparagus is often sold standing upright in water. This is because it stays more fresh when stored this way.

How To Trim Asparagus
Recently my husband had to react quickly and give me the Heimlich maneuver when we were staying in a secluded resort in Costa Rica.
And yes it was due to a very fibrous piece of asparagus that fit perfectly into my trachea.
Since that experience I have always been extremely diligent to remove every centimeter of the tough, woody part of an asparagus spear.
But how do you know where to trim it? The answer is quite simple.
You can take a knife and quickly slice at the junction where the light brown turns to green.
But theres a better and more effective way to trim asparagus:

How To Prep Asparagus For Roasting
There are two ways to trim asparagus:
- Bend and Break . Hold the top of the stem in one hand and grip it near the base with the other. Briskly bend and the asparagus will naturally snap in the right place. Its almost like magic and very satisfying.
- Cut the Bunch . Hold the entire bunch of asparagus in one hand and trim off the ends about 1 1/2 inches or so from the bottom.
While cutting the entire bunch of asparagus at once is fastest, the results do not turn out as well as if you bend and break each spear individually.
Every stalk of asparagus has a slightly different breaking point where the woody end starts. If you cut the whole bunch at once, youll waste edible flesh of some spears, while missing the woody parts of others, resulting in a few stringy bites.
What Is Roasted Asparagus
While vegetables are often maligned in our culture, I think their poor reputation is to be blamed on how folks prepare it. Over time Ive found that oven roasting my vegetables, like oven roasted tomatoes or roast garlic really brings out the flavor in the vegetable.
Roasted asparagus is cooked in a hot oven instead of boiling or steaming, preparations that often result in soggy and stringy veg. Roasting imparts a richer flavor and a crisp-tender texture.

How To Prepare It For Roasting
The best way to prepare asparagus is to snap off the ends one-by-one. This is the natural break between tender asparagus and the woody stem. The woodsy part should snap off easily.
If this is a task that seems too tedious, simply snap one spear. Then, bunch the asparagus spears together, line up the ends and cut at the point where the one asparagus spear was broken.
You can toss the ends or save them for later to use next time you make vegetable stock.
What Is The Healthiest Way To Eat Asparagus
Try adding shredded, raw asparagus to pasta dishes and salads. Alternatively, enjoy the spears lightly steamed or sautéed in a frittata, or as a stand-alone side dish. Asparagus is a nutritious choice, regardless of whether its cooked or raw. Try eating a combination of the two for maximum health benefits.
