There are a few variables when it comes to baking pork chops thickness, bone-in vs. boneless and temperature of the pork before its baked. Here are my basic guidelines for baking pork chops and how long it can take.
- Let the pork sit at room temperature for at least 30 to 45 minutes.
- If the pork is at room temperature and brined here is how long they should bake
- 1/2 inch thick 8 to 10 minutes
- 1 inch thick 18 to 20 minutes
- 1 1/2 inch + thick 25 minutes

Are you sick ‘n’ tired of dried-out, tough pork chops? I was until I came up with this recipe. The trick to cooking meat and poultry is to know your internal temperatures. That is why you should invest in an instant-read, digital meat thermometer. I will NOT cook without one. And another thing people don’t realize is that today’s pork does NOT have to cook till it gets to 160 to 170 degrees F internal temperature. I like to serve these with some garlic smashed potatoes and grilled asparagus.

1 package panko bread crumbs |
6 bone-in pork chops, at room temperature |
½ cup mayonnaise, or as needed |
1 pinch Cajun seasoning, or to taste |
Steps:
- Preheat oven to 375 degrees F . Spray a 9×13-inch baking dish with cooking spray and spread bread crumbs on a large plate.
- Rinse pork chops and pat dry with paper towels.
- Mix mayonnaise and Cajun seasoning in a bowl brush mayonnaise mixture over pork chops. Gently press pork chops into bread crumbs to coat, shaking off excess crumbs. Arrange breaded pork chops in the prepared baking dish. Repeat with remaining chops.
- Bake in the preheated oven until pork is slightly pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F . Loosely cover pork chops with aluminum foil and let rest for 10 to 15 minutes before serving.

How Long To Cook Pork Chops In Oven
Time in the oven really depends on the pork chop thickness and your oven. In a 400°F oven, count on 7-8 minutes per half-inch of thickness for boneless pork chops with 1-2 minutes more for bone-in chops. For example, 1-inch thick boneless pork chops will take about 15 minutes.
The only reliable way to check doneness is by inserting an instant-read thermometer into the middle of the chop. When the internal temperature reaches 145°F, remove from the oven. Avoid cutting into the meat, as the juices will escape and dry out the meat.
Note: The meat may still be faintly pink at 145°F and its normal as well as safe according to the USDA.

MEAT You can use boneless or bone-in for this recipe. We used boneless chops at about 1-inch thickness, or 5.5 oz each. I recommend thick-cut pork chops over thin-cut as they pack more flavor and are much juicier when baked. Choose a chop thats anywhere between 1- 1 1/2 inches thick, any less than that youll want to keep a close eye on in the oven because theyll likely be done sooner than our cook time states. If you choose bone-in, you will need to add more time as they take longer to cook compared to boneless. The key is to use a meat thermometer, pork is ready when it reaches 145F.

- Preheat your oven to 400° F.
- Pour a tablespoon or so of olive oil on each pork chop and spread it evenly. Salt and pepper the chops, and be generous because salt really brings out the pork flavor.
- Sear each side of the chop in a heavy oven-proof skillet.
- I use a Cast Iron Lodge Skillet, it is made in America and lasts forever!
- Place skillet with seared chops in the oven and bake until internal temperature is 145 degrees. This takes around 15 minutes unless you bought super man sized chops, then maybe 20 minutes.
- Remove and let rest before serving. These are juicy and so darn good!

In a 400 degree Fahrenheit oven, boneless pork chops need to cook for 7 minutes per ½ inch of thickness. If you are using bone-in pork chops, add an extra minute for each ½ inch.
If you’re new to making roasted pork chops, the best way to tell if they are fully cooked is to use an instant read meat thermometer. Pork should be cooked to an internal temperature of 145 degrees Fahrenheit. We use our meat thermometer to make sure the meat doesn’t overcook.

I love making oven baked pork chops because theyre super easy to make and require very little prep, very little cleanup, and since they cook in the oven, you can take care of other things without having to pay constant attention to them. Whats Better, Bone-in or Boneless?
Dont buy boneless pork chops. Believe it or not, buying pork chops with the bone in is much better. Why is this? Bones actually lend flavor and moisture to the meat and removing them will lead to a less satisfying overall taste. Furthermore, pork chops with the bone still attached help slow down the speed at which the meat is cooked which in turn, gives you more leeway time wise when cooking.
Room temperature meat makes a difference!
Let your pork chops come to room temperature before cooking. According to most chefs, letting the meat sit for 20-30 minutes at room temperature allows for more even cooking throughout! If you transfer directly from the fridge to the oven without letting it sit first, you may end up with some areas being more cooked than others. Try this tip and taste the difference!
Fat means flavor!
Dont cut the fat off! This might seem like a no brainer but cutting off the fat is like guaranteeing your pork chops will taste more bland than normal. Never cut the fat off before cooking, there are very few instances with any meat when this is recommended.

Always use a meat thermometer when cooking. A fast digital one like my much treasured Thermapen are the best for instant readings. Make sure you only cook to the recommended safe temperature which is currently 145 degrees Fahrenheit.
