Bake an Apple Pie in a Paper Bag

So why use a brown bag when making a brown bag apple pie? Simple, the brown bag traps all the steam from the apples, creating a top crust that is done to perfection and with a flavor throughout the pie that is unlike any pie youve ever tasted. And speaking of the frosting top, this is another unique feature of this recipe. Instead of using standard pie crust for the top, were using this frosting which is made from brown sugar, flour, sugar and butter.

When choosing apples for this brown bag apple pie recipe, there are many varieties from which to select/ Of course, you can go with whatever your favorite might be, it will still be good. But certain apples lend themselves to the baking process and can really bring out even more flavors. My personal favorite is to use a combination of Granny Smith and Honey Crisp apples. Its the perfect combination of tart and sweet. Of course, there are many health benefits to apples. Check out this awesome article on the health benefits of apples.

Obviously, you will want to use care when placing the bag in the oven. Make sure it is not touching the heating element or the sides of the oven. Also, when placing the pie in the bag, make sure the sides and top of the bad are not touching the bag.

Deep Dish Or Standard Shallow Pie Plate

When I first published this recipe on the blog in 2014, I baked it in a traditional shallow pie plate. In the video and newer photos, I used a deep dish pie plate.

In either a deep dish or standard pie plate, the baking time stays the same. The paper bag technique is designed to cook the apples perfectly by steaming them in the bag.

The crust is shielded from any direct heat of the oven until the inside is nearly completely cooked. The final 10 minutes of baking time is just to fully brown the crust.

If you decide to bake this apple pie in the sort of standard shallow pie pan you see above, you wont use all of the sliced apples. Just cook the remaining apples down on the stovetop in a small heavy-bottom saucepan until tender.

As the filling mixture has sat in the bowl, some of the moisture has been drawn out of the apples. They shouldnt need any additional liquid to be cooked separately. If youre concerned about the apples burning, just add a splash of water to the pan.

You can also create your own bag out of several large pieces of parchment paper. Just be sure to secure your pieces together with plenty of folds and staples. The purpose of the bag is to lock in all that precious steam!

How To Make A Paper Bag Apple Pie

The Paper Bag Apple Pie originated from an Amish cookbook called The ABCs of Paper Bag Cookery, and was later made famous by The Elegant Farmer in Mukwonago, Wisconsin. Their pie has become so popular, in fact, that they now ship nationwide! Unfortunately, the original version of this recipe is kept top-secret so while there are many recipes on the internet, theyre all copycat versions.

I decided to try Food Networks version. For the first go-round, I made it exactly as written. The recipe doesnt have an egg wash or sugar topping, so once I was done with my lattice, I opened the paper bag, pressed the seams out, placed the pie inside toward the back where the bag was widest, sealed the bag, and placed it on a sheet tray. I then baked the pie for one hour at 375°F.

After an hour, I pulled the pie from the oven and cut out a circle over the pie. I then returned the pie to the oven for 15 minutes more, as instructed. What came out was a beautifully blonde crust. It was light and crisp not clunky at all like some crusts can be. Plus, all the fruit juices that usually spill out and burn on the sheet tray were captured inside the bag, lessening the mess I had to clean.

Serving And Storing Dutch Apple Pie

Once the pie is done baking, take it out of the oven and let it sit inside the bag for 5 minutes. Then take it out and let it cool to room temperature before slicing. Even though this delicious Dutch Apple Pie can totally stand on its own, who can resist the option of serving it up a la mode? Especially when you pair it with our fabulous homemade vanilla ice cream. If you have leftovers store in an airtight container in the fridge. It should stay good for a few days.

  • CRUST. Make the dough for the pie crust , then press the dough into the bottom and sides of a 9 pie pan. Do not roll it out.
  • FILLING. To make the apple pie filling, mix together the sugar, flour, nutmeg and cinnamon. You can use regular sugar or brown sugar. I like to do 1/2 and 1/2. Gently toss the mixture with the sliced apples, then let them sit for about 10 minutes. Then pour the filling into the unbaked pie shell.
  • CRUMBLE. Add flour, butter and sugar to a bowl and use your fingers to mix together until crumbly. Then sprinkle the mixture on top of the apple filling.
  • BAKE. Place the pie in a brown paper bag and staple it shut. Then bake the pie in the oven at 350°F for about 1 1/2 hours. Remove from oven and slit the bag open with a knife. Then transfer to a cooling rack.

Maybe its happened to you, too: You pull your pie from the oven and its perfectly golden, but the fruit juices are still vigorously bubbling, indicating you need to bake it longer. So you pop it back in. When you return, the juices are still not reduced enough but the sugars on the crust are getting too dark. You scramble to cover the spots with foil, hoping it will buy you more time. But no matter how much you try, you still cant get that fruit juice reduced enough, and now your crust is borderline burnt.

As a self-taught pie maker, its been quite a journey learning all the techniques for making perfect fruit pies. Nailing the two most important qualities a perfectly golden crust and a filling that doesnt spill out when you slice it is truly a balancing act, because you have to bake the pie long enough to give the fruit and its juices time to reduce, but not so long that the crust burns. Its especially tricky for anyone who likes to sprinkle raw sugar on the crust, because those sugars can caramelize quickly and unevenly, creating dark spots.

But what if I told you that you could bake your pie as long as you need without ever having to worry about burning your crust? And that you likely already have the tool you need in your kitchen? I hereby introduce you to the Paper Bag Apple Pie.

The phone number on the website led me through a labyrinth of recorded menu optionsthe first of which offered me a “timely message of encouragement from the Bible.” After selecting 2 for the market , I was led through several more options. I clicked through 0, then 1, then 3 before landing at Debbie McCready, the market’s Wholesale Customer Service Representative.

Debbie explained to me that the recipe originated from an old cookbook the owners of the farm, “Farmer Dan and his wife Karen,” came upon years ago, and had since developed into a large-scale pie operation. “The bag,” she said, “allows the pie to absorb the flavors of cinnamon sugar while keeping the apples crispy.” Over the course of our conversation, I began to get the hint that this recipe is kept Coca Cola-Level Top Secret. She also made clear that the several recipes for it that exist online are not the original recipethough she gave me permission to give it my best shot. “Now you know I can’t tell you that,” she repeated as I asked more questions and jotted down the clues she let slip:

  • “It’s not a short bake-time at allit’s actually different temperatures.”
  • “The crust is sugar cookie-like.”
  • “We cut a hole in the bag during the baking process.”
  • “No, you cannot just use any brown bag. We get ours specially-made.”
  • “Tapioca makes for a better pie experience.”
  • “The pies we sell at our market use a lard crust.”
