  • Use High quality ingredients: the better the ingredients, the better the end result! In particular, high quality bacon and cheese! Great ingredients make all the difference in the end result truly being gourmet.

How To Make Bacon Mac And Cheese

This recipe comes together in just over 30 minutes, so you can have bacony, cheesy goodness fast. If you want to make it even quicker, you can skip baking and serve it right out of the pan. I suggest trying it baked though!

  • Cook chopped bacon over medium heat until crispy. Remove from pan to a paper towel lined plate until cooled, then crumble into small pieces.
  • Drain bacon fat until you have only 2 tablespoons remaining. Add butter once melted, sprinkle flour overtop and whisk until smooth. Stir and cook another 30-60 seconds before adding spices.
  • While still whisking, pour in milk. Continue stirring until mixture is evenly combined.
  • Keep stirring as you bring your mixture to a boil. Reduce heat and simmer, stirring constantly, until thickened. Youll know your mixture is ready when your whisk leaves a trail through the sauce. You can also test this by passing a spoon through the sauce, flipping it over, and using a finger to run down the center of the spoon. If the sauce stays put, its ready. If it tries to run back together, keep cooking.
  • Once thickened, remove sauce from heat and stir in your cheese until fully melted.
  • Add cooked pasta and just half of your bacon and stir until combined. Pour into a baking dish and set aside.
  • Make your panko topping! Melt butter and then add panko and cook until toasted. Add your remaining bacon right in here for an incredible crisp, buttery, bacon-y topping.

    Use gluten free pasta. If you dont have a favorite, I prefer the Tinkayada brand of gluten free pasta. Its texture is the least crumbly and tastes the most like regular pasta.

    To thicken the cheese sauce, there are two options. Option one is substituting flour for gluten free flour, and option two is using cornstarch instead of flour.

    If choosing to use gluten free all purpose flour, simply substitute it for regular flour and mix it with melted butter.

    When using cornstarch instead of flour, it has to be mixed with cold milk first and then added to the pot to heat through.

    To make the bacon topping gluten free, use gluten free bread crumbs instead of Panko.

    • I use corkscrew pasta in this recipe, its sometimes called cavatappi or cellentani. These noodles are heartier than standard elbow macaroni. That being said, if you want to use elbow macaroni or a different type of short pasta, that will also work well.
    • You should use freshly grated cheddar cheese for this recipe. The bagged pre-shredded cheddar cheeses are coated in anti-caking agents and just dont melt as smoothly.
    • I find that whole milk works best for the creamiest sauce, you can also use half and half or low fat milk.
    • You can use pre-cooked bacon to save on prep time. If you go that route, swap out the bacon fat in the recipe for 2 tablespoons of melted butter.
    • I like to garnish my mac and cheese with a little chopped parsley. You can also use green onions or chives, or omit the herbs entirely.

    Just made this tonight for dinner, it was a success! My eight year old loved it, had two servings! I doubled the recipe and baked in two loaf pans. I used a little extra cheese and extra bread crumbs, just personal preference. Next time I will definitely add some real bacon.     How To Make Bacon Mac And Cheese:

    • The first thing that I do is dice my raw bacon and cook it over medium-high heat until it’s cooked through. Once it is cooked, I dump the panko breadcrumbs in and stir them around with the bacon. Then, set the bacon breadcrumb mixture aside.
    • While the bacon is cooking I shred up all of my cheese. For best results shred your own cheese and don’t use the bagged pre-shredded.
    • Set the cheeses aside and start boiling your macaroni according to package directions.
    • Melt your butter and whisk in the flour. Let the flour and butter cook for about one minute to get rid of the “floury” taste.
    • Next, slowly whisk in the milk until you have a smooth mixture.
    • Now you will let your milk mixture simmer over low heat for about 5 minutes until it has thickened.
    • Then, turn the heat off and stir in all of your shredded cheese until melted.
    • Mix your cheese sauce together with your cooked macaroni and pour into a large baking dish. Top evenly with the bacon and breadcrumb mixture, then bake for 20-30 minutes.
