I made these without the bacon for meal prep. They still had great flavor and love the protein boost from the Greek yogurt. The recipe is not super active, since youre waiting on the air fryer to cook for most of the time, so its great to be able to get a good meal without having to spend a ton of time prepping and actively cooking.

Do not sleep on these! I only had 1 russet and 1 sweet potato and didn’t want to combine them so I made them up in separate bowls. We ate the russet version with dinner last night and it was good but for lunch today I am eating the sweet potato version and OMG it’s amazing. Sooooo good.

Can I Bake These Twice Baked Potatoes In The Microwave
Absolutely yes, but only when baking the plain potato before cutting it in half. Be sure to prick the potato all over with a fork before microwaving it, so it can release steam.
Most microwaves have the potato button on them, which is ideal for baking one big potato. If you dont have that button, I recommend microwaving the potato for three minutes, carefully flipping it over, and microwaving another three minutes. The inside should easily scoop out and be fluffy.
To reheat the potato and melt the cheese, I do recommend using the oven. But you could also do this in the microwave in 30 second increments per potato until its as hot as you like!

It doesnt get much easier than this. Theres no need to wrap in foil, soak, or anything like that. Simply wash and dry potatoes, poke some holes in them with a fork, spray with a little cooking spray, and sprinkle with salt . Then air fry at 400ºF for 30-40 minutes until the baked potatoes are fully cooked.
I like to use a food thermometer to check all the potatoes in different spots. As long as theyre in the 190ºF to 200ºF range, they should be perfectly baked and soft in the center. Dont have a food thermometer? Test them with a fork. If it goes in easily, theyre good to go.

This recipe is made for two people, hence the whole date-night-in thing. It requires an extra large russet potato , and most of the usual suspects for a loaded potato. As for the other twice baked potatoes filling ingredients, there are plenty of shortcuts and customizations you could make. Using pre-cooked bacon would save some time, and you could use ranch seasoning in place of the fresh parsley if thats all you have on hand. And if you wanted to reduce the fat, you could use a lower fat bacon and omit the butter altogether. Its hard to mess these up!
One thing Id highly recommend if youre a garlic fan would be tossing some roughly chopped garlic in the hot bacon grease for 30-60 seconds after youve cooked the bacon.
