When choosing a flavorful cheese, go for sharp cheeses or ones that are known to be flavorful. Select extra sharp cheddar cheese for a great flavor kick. In addition to cheddar, you can also choose to add another flavor like Parmigiano Reggiano. Even though it doesnt melt as well, it will add another layer of flavor.
Mozzarella is the best cheese for smooth cheese sauce because it melts beautifully and extra gooey. Cheddar and Monterrey Jack cheese melt just as nicely.

- I use corkscrew pasta in this recipe, its sometimes called cavatappi or cellentani. These noodles are heartier than standard elbow macaroni. That being said, if you want to use elbow macaroni or a different type of short pasta, that will also work well.
- You should use freshly grated cheddar cheese for this recipe. The bagged pre-shredded cheddar cheeses are coated in anti-caking agents and just dont melt as smoothly.
- I find that whole milk works best for the creamiest sauce, you can also use half and half or low fat milk.
- You can use pre-cooked bacon to save on prep time. If you go that route, swap out the bacon fat in the recipe for 2 tablespoons of melted butter.
- I like to garnish my mac and cheese with a little chopped parsley. You can also use green onions or chives, or omit the herbs entirely.

How To Make Pumpkin Mac And Cheese
This isnt a 15 minute recipe for macaroni and cheese, but 30-40 minutes aint so bad either. And its worth the extra time to cook in all that flavor! Pumpkin, bacon, bread crumbs, and loooots of cheese all baked together in a casserole dish. I love how cheesy and creamy this recipe turns out, and the pumpkin and bacon add so much savoriness to it.
You wont believe how much creaminess the pumpkin adds to this family favorite. Just the right touch of something extra to take a recipe from great to amazing. You guys know I love my cheese, but now I love pumpkin and cheese together thanks to this baked mac and cheese with bacon.

Bacon Macaroni Cheese Ingredients
Bacon: I prefer thick-cut bacon in this recipe. But, you can use regular bacon as well.
Noodles: I went with elbow macaroni for the noodles. Use pasta noodles that you prefer and be sure to cook them al dente before adding the cheese sauce.
Cayenne Pepper: Cayenne pepper was added to the cheese sauce with ground mustard and garlic powder. But, you could definitely leave it out.
Cheese: Shredded sharp cheddar cheese and shredded mozzarella cheese are the kinds of cheese I used. But, you can certainly kick it up with whatever cheese blend you would like.
How To Make Gourmet Mac And Cheese:
1. Cook the pasta: cook your favorite pasta according to package instructions, just until al dente t! Strain and rinse with cold water. Set aside
2. Cook the bacon in a large skillet until perfectly crispy. Make sure to leave a tiny bit of that delicious bacon grease in the pan for step number 2the sauce!
3. Make the sauce: melt butter, whisk in flour and cook, stirring, for 2 minutes. Reduce heat to low and gradually whisk in milk. Mix together cornstarch and half and half. Gradually add it to skillet followed by mustard, chicken bullion, onion powder, garlic, powder, parsley, salt and pepper. Cook until slightly thickened and remove from heat.
4. Stir in cheddar cheese, bacon, and pasta. Pour mixture into 8×8 baking dish. Sprinkle parmesan cheese on top.
5. Top with crumb topping: Add panko, melted butter and olive oil to a skillet and cook over medium-high heat, stirring constantly, until crumbs are golden brown. Evenly sprinkle bread crumb mixture over the gourmet mac and cheese. Add remaining bacon crumbles on top.
6. Bake at 350 for 15-20 minutes or until bubbly. Serve warm.

For bacon mac and cheese, you first want to cut bacon into small squares and cook it in a pan. Some of the bacon fat gets mixed with flour, milk and water to make a sauce, and the pasta simmers in the sauce until tender. Add a generous amount of cheddar cheese, and stir in the crispy bacon. Add more bacon for garnish, along with a sprinkle of parsley, then serve and enjoy.

This is my baked mac and cheese with bacon recipe.
This variation includes bacon and eggs, though I am not suggesting you eat this for breakfast! I had some eggs yolks leftover from some baking and decided to add to the sauce, to give it some more richness.
And we all know that bacon and cheese belong together. It worked out quite well I do think.

What is the best cheese for mac n cheese? I have used grated cheddar and mozzarella, because that is what I bought pre-shredded in the store.
But of course, you could use a sharp cheddar cheese, or top it off with some parmesan cheese.
Or maybe even a tasty blue cheese would go well to add some more flavour to the dish.
I like adding the bacon as I think it belongs in there and the breadcrumbs just give it a nice crispy topping. You could also add some cream to the sauce if you want.
