This dessert has all the makings of a delicious homemade cheesecake recipe, it is made of a crunchy graham cracker crumbs and a sweet and delicious strawberry cheesecake filling made with cream cheese such as the famous Philadelphia brand.

In a large bowl, use an electric mixer on medium speed to combine cream cheese.
Next, add sugar and sour cream and mix until smooth. Scrape the sides of the bowl with a spatula as needed.
Add eggs one at a time, mixing after each egg.
Add the vanilla extract and mix again until smooth.
Pour mixture over the graham crust.
Use a spatula to smooth the filling.
Bake in the oven at 350 degrees F for 30-35 minutes, or until the center is just a bit jiggly. The outside of the cream cheese layer should start to turn a light golden brown color.
It is okay if it cracks a bit the strawberry topping will cover any cracks.
Remove the cheesecake and place it on a wire rack to cool for 1 hour. Then, transfer it to the fridge for 3-4 hours.

If you choose to bake your crust, it will be less prone to crumbling when the pie is sliced. It only takes a few minutes of time to set in the oven. Once the graham cracker crust ingredients are mixed and pressed into your pie pan, make for 6-9 minutes in a pre-heated oven at 375 degrees Fahrenheit.

The rich creamy layer topped with fresh strawberries so divine. Adding Baileys into the mix makes those flavours even better.
A traditional baked cheesecake is a thing of beauty but simply by their nature, they do take longer to make. They can also be trickier to master and they can crack or curdle. So I am a huge fan of the no-bake version in fact I have developed lots of delicious varieties.
Many no-bake cheesecakes use gelatin to help set the cheesecake but I do not find this necessary. This means that this cheesecake recipe is suitable for vegetarians.

What Cream Cheese Is Best For No
Most cream cheeses are best for cheesecake. The full fat versions are great and do give a great taste. But unlike in baked cheesecakes, the reduced fat varieties can still work.
In both cases if there is any water on top remove it before adding the cheese to the mix. Water can make the final cheesecake not set as well.
BRANDED CREAM CHEESE VS OWN BRANDS
There are so many different types of cream cheese available and having tried a few different ones I think they all work pretty well.
Philadelphia is probably the most well known brand in the UK and US and this is obviously great to use. But I mostly use supermarket own brand varieties and they are just as good.
I would however recommend that you avoid using super savers versions as sometimes they can be a bit bitty and not have the nicest flavour. I would also recommend that you avoid any flavoured varieties.

Tips For The Perfect No
Ive made this recipe more times than I can count and I have a few tips, so that your dessert is perfect. This pie can be a little tricky sometimes to set properly and its essential that you follow all of these tips for best results.
- Graham crackers. For the crust, you can buy graham cracker crumbs from the grocery store , or make your own by pulsing 10 full sheets of graham crackers in your blender or food processor.
- Cream cheese. I do not take my cream cheese out of the fridge prior to beating it. It should be soft, but very cold.
- Refrigeration time. For best results, be sure to refrigerate the cheesecake for at least 6 hours, but overnight is even better. The longer you refrigerate no-bake cheesecake, the sturdier it will be and the more lovely the slices. Do not freeze the cheesecake to set it. It will be difficult to slice the filling and the texture wont be as smooth.
- Slicing. Use a clean, sharp knife to cut into slices for serving. For extra neat slices, wipe your knife clean with a paper towel between each cut.
