What Temperature To Cook Pork Chops To
Pork meat needs to be cooked until an instant-read thermometer registers 145°F. This is the updated guidelines from USDA in 2011, compared to the previous standard of 160°F. As a result, the pork might be pinker than most people are used to, but its fully cooked as long as the internal temperature reaches 145°F.
Note: Make sure to avoid the bones when you insert your thermometer.

For the baked green beans I used frozen green beans, that I seasoned with salt and pepper and baked in the oven at the same time with the meat.
The only thing is that you do need to keep an eye on the green beans and remove them from the oven if they are done before the chops.
I usually remove them at the same time, but in some cases the beans may cook faster than the meat.
How To Make Baked Pork Chops:
As much as I would love to say that you can make perfectly baked pork chops by just popping them directly in the oven, Ive just never had good luck with that method. Instead, Ive learned over the years that the secret is taking an extra 15 minutes to brine the pork. Then giving it a quick sear on the stove before roasting it in the oven. And then, as I mentioned above, using the help of a cooking thermometer to measure the internal temperature of the pork and ensure that it has reached the magical 145°F . It may sound complicated, but I promise you its easy peasy. Simply:

Avoid Overcooking With The Stovetop To Oven Method
Pork chops are a tender, quick-cooking cut of meat so quick-cooking, in fact, that theyre very easy to overcook. This is why I like to start the chops on the stovetop, where they get a good sear, and then transfer them to the oven to finish cooking. The gentle heat of the oven helps us control the rate of cooking a little better and also prevents the outside from getting tough and dry before the middle has finished cooking.
You can also make this whole process of cooking pork chops easier by using just one pan. Heat up the skillet in the oven while you get the rest of the meal prepped, then transfer it carefully! to a stovetop burner to sear the pork chops. Once the chops are golden on the underside, you flip them and transfer the skillet back to the oven. The residual heat from the skillet will sear the other side of the pork chops while the heat of the oven cooks them through.
What Temperature Should Pork Chops Be Cooked To
You can now cook pork to 145 °F. I recommend using a solid digital meat thermometer to check your temperatures and make sure they are cooked correctly. I personally use a Thermapen which is excellent because it gives you a reading right away without losing too much heat from the oven/bbq/etc. They also come in pretty colors like this:

Shopping For Pork Chops:
For best results, we recommend using bone-in rib chops for making oven-fried pork chops, but other cuts, including boneless pork chops, can work as well. Heres an overview of the most common varieties of pork chops.
- Rib chops: As the name indicates, these chops are cut from the rib section of the pork loin. Because they have a good amount of fat, they are generally tender and juicy and consequently, a favorite in our kitchen. Boneless pork chops are usually cut from rib chops. Rib chops are best for oven-frying, pan-searing, frying, baking, and grilling.
- Center-cut chops: Center-cut pork chops are another flavorful cut from the pork loin. They have a bone that separates the loin section of the chop from the tenderloin. They are leaner than rib chops and can dry out more easily during cooking, but they have great flavor. Center-cut chops are best for grilling and pan-searing.
- Blade chop: These chops are cut from the shoulder section of the loin and not as easy to find as the rib and center-cut. Theyre juicy and have good flavor, but can be rather tough, so blade chops are best for braising.
Pork Chop Cooking Temperature
Here is where the optional digital meat thermometer can be your best friend. Pork chops should be cooked to an internal temp of 155-160 degrees. Always allow your meat to rest after cooking. This allows the juices to redistribute.
If you cut into your meat too soon, the juices will run all over the plate rather than giving you a deliciously juicy cut.

Why Do My Pork Chops Always Come Out Tough
Overcooked Pork Chops Are ToughBecause pork chops are such a lean cut, they are relatively quick-cooking and prone to overcooking. This is partly due to carry-over cooking. Even when you take the chops out of the oven or off the stovetop, they still continue to cook a tiny bit due to the retained heat.

Lets Bake Some Pork Chops
Okay, time to get into the step-by-step baking procedure! I have to confess, this is ridiculously simple! All you have to do is sear the chops, and then bake them until done. Heres the rundown, in detail:
Cut Pork Chops From Pork Loin
This recipe is made with boneless pork chops. In order to be economical, I bought a half pork loin and sliced it into pork loin chops. Not only was this way cheaper than buying pre-cut chops, but it also allows me to cut thick pork chops, which will help them stay juicy in the oven.
Can you use bone-in chops? Yes. Theyll bake similarly. You can use any pork chop cut youd like, just make sure it is at least 1-inch thick.
