In this recipe, we don’t sear the chops on the stove. Instead, they go straight into the oven. From our experience, this makes the chops more tender and saves an extra step of work. And with the gorgeous color of the spices, you won’t miss the sear.

How To Cook Pork Chops In The Oven

  • Make pork chop marinade. Find the pork chop marinade recipe here and marinate for up to 12 hours. Take the chops out of the fridge 30 minutes before cooking.
  • Sear. Preheat a cast iron grill pan over medium-high heat. Melt butter, then add pork chops in a single layer. Sear, without moving, until browned with grill marks. Flip and sear the other side.

The only thing is that you do need to keep an eye on the green beans and remove them from the oven if they are done before the chops.

As much as I would love to say that you can make perfectly baked pork chops by just popping them directly in the oven, Ive just never had good luck with that method. Instead, Ive learned over the years that the secret is taking an extra 15 minutes to brine the pork. Then giving it a quick sear on the stove before roasting it in the oven. And then, as I mentioned above, using the help of a cooking thermometer to measure the internal temperature of the pork and ensure that it has reached the magical 145°F . It may sound complicated, but I promise you its easy peasy. Simply:

  • Brine the pork. In a large mixing bowl, combine warm water and kosher salt and stir until the salt is dissolved. Submerge the pork chops in the saltwater and soak for at least 15-30 minutes, or up to 4 hours. Remove the pork chops and rinse them off with cold water. Then pat them dry with paper towels and place on a clean plate.
  • Season the pork. Brush the pork chops on both sides with olive oil. Then sprinkle with your desired dry seasonings.
  • Pre-heat your skillet. Meanwhile, as youre seasoning the pork, heat your skillet over high heat for about 5 minutes, until it is super-hot. Once your pork is seasoned and your skillet is ready
  • Rest the pork. Let the pork rest for 3-5 minutes, to lock those juices in. Once the pork is ready to go

    Pork chops are a tender, quick-cooking cut of meat so quick-cooking, in fact, that theyre very easy to overcook. This is why I like to start the chops on the stovetop, where they get a good sear, and then transfer them to the oven to finish cooking. The gentle heat of the oven helps us control the rate of cooking a little better and also prevents the outside from getting tough and dry before the middle has finished cooking.

    You can also make this whole process of cooking pork chops easier by using just one pan. Heat up the skillet in the oven while you get the rest of the meal prepped, then transfer it carefully! to a stovetop burner to sear the pork chops. Once the chops are golden on the underside, you flip them and transfer the skillet back to the oven. The residual heat from the skillet will sear the other side of the pork chops while the heat of the oven cooks them through.
