How to Cook Baked Potatoes on the Big Green Egg

Need a side dish on the grill? Make baked potatoes on the grill. They are brushed with butter than seasoned with salt, pepper, and garlic powder. Wrap them in tinfoil and grill them! The result is crispy seasoned potato skins with light and fluffy insides.

Now Im serving up baked potatoes on the grill! These are everything a baked potato should be! I mean it has BUTTER, garlic, salt and pepper. They are so easy and perfect for a grilled side dish. Throw them on the grill while your main dish is on there and youll have a full meal in no time at all. They only take 30 minutes!

These baked potatoes are so simple! Im not even that huge of a baked potato love but these will be going on my grilling rotation. Its because the skin is delicious with the butter and seasonings on it and the inside is perfectly light and fluffy. A must have in baked potatoes!

How Long To Smoke Baked Potatoes

I found with the smoker preheated and running consistently at 225 degrees F, it will take around 2 hours to smoke a baked potato. Better yet, have an instant-read thermometer handy, and cook these potatoes until the temperature reaches 205-210 degrees F.

One final way to tell how long to smoke baked potatoes is to pierce the potatoes with a fork. If they pierce easily theyre ready to eat!

The kamado is a traditional Japanese oven that was traditionally used in the home.

When you cook with this type of grill, its important to have patience and take your time.

When cooking this type of cut, we find that its best to cook at a low temperature of 250°F. If youre wondering how long to smoke your pork butt for pulled pork, know that you need to cook to internal temperature, not time.

The goal is to reach an internal temperature of 203 degrees F and for your meat to feel tender when poked with your thermometer probe.

For sweet potato lovers, this might be an excellent alternative to the traditional dish normally served for the holiday. Give it a try!

Baked Sweet Potatoes on the Big Green Egg

What youll need

  • 4 sweet potatoes
  • ½ cup butter
  • Kosher salt to add to taste

Make it

  • Set the Big Green Egg for indirect cooking at 500°F
  • Set the sweet potatoes on the Egg grill and close the come. Give the potatoes 40-60 minutes to bake. Potatoes should be tender when pierced with a knife or fork.
  • While the potatoes bake, place the butter, honey, rum and orange juice in a saucepan. Heat until the butter melts, then season to taste with kosher salt. Keep warm.
  • Remove the potatoes from the Egg. Take an injection syringe, fill it with the butter, honey, and rum mixture and inject directly into the center of each potato.
  • Cut each potato open and enjoy!

How To Cook The Twice Baked Potatoes On The Bge Or Kamado Joe

Start out by giving the potatoes a good scrub with a potatoes scrubber under water. Once complete dry with a towel and let them set until dry.

Drizzle some Extra Virgin Olive Oil on all the potatoes and rub them until the potatoes are coated all the way around.

At this point the Potatoes are ready to be put on the BGE. Once the BGE is up to temperature, right around 375-400 degrees, the potatoes can be set directly on the grills grate. Let the potatoes cook for about 30 minutes in which youll need to flip them. Once flipped, let them cook for another 30 minutes

After a hour has passed it is time to prepare the twice baked potatoes for the second round of cooking.

Start out by cutting the potatoes the long way or lengthwise and in half.

Once complete you can start coring out the potatoes in which youll want to leave a little in to help the potato keep its structure when it is refilled. Place the cores in a separate bowl in preparation for the mixture.

Once the potatoes have been cored it is time to add the butter , minced garlic, Paprika and break up the bacon.

Then continue adding the sour cream, milk and Colby Jack or Cheddar & Monterey Jack Cheese and mash as you would for mashed potatoes.

Now that the mashed potatoes are ready it is time to fill the potatoes back up. Generously fill the cored potatoes back up. At this point, if you are preparing these ahead of time you can put them in the fridge until you are ready for them.

How To Smoke Baked Potatoes

Smoking baked potatoes may just be the easiest thing you cook on your smoker. The only thing you need to worry about is maintaining a consistent temperature. Heres how to smoke baked potatoes:

  • Preheat. Fire up the ol smoker to 225 degrees F. You can use pretty much any hard or fruitwood you like for smoking, and the potatoes will pick up the perfect kiss of smoky flavor. I say experiment until you find the one you like best.
  • Season. Scrub and dry the potatoes. Pierce with a fork all around each potato. Next, drizzle with olive oil and season with Beef Rub or salt and pepper.
  • Smoke. Place the potatoes on the grill grates of the smoker, close the lid, and smoke for around 2 hours or until the potatoes have softened and pierce easily with a metal fork.
  • Serve. Serve immediately with your favorite toppings!
  • The best thing about this method is that you can toss your seasoned potatoes on the smoker alongside whatever else you are cooking. Meat and potatoes are the ultimate duo, right? Ive cooked these alongside smoked prime rib, and it makes for the most amazing meal. Smoked ribs, brisket, pulled pork, all of these are perfect smoked potato accompaniments.

    These deliciously twice baked potatoes on the BGE or Kamado Joe will surely have your family coming back for seconds! They are loaded with cheese, bacon, sour cream all with a touch of minced garlic and paprika.

    Ingredients For Smoked Baked Potatoes

    How to make Baked Sweet Potato – Big Green Egg

    Now, as promised. These baked potatoes only require 3-4 ingredients. Heres what you need for these baked potatoes:

    • 6 large russet potatoes. I recommend going with classic russet potatoes for this recipe. These potatoes are high in starch and the quintessential baking potatoes. They also take the smoke well and provide you with a good, hearty side dish.
    • 4 Tablespoons olive oil. Grab some high-quality extra virgin olive oil for this recipe.
    • 4 teaspoons Hey Grill Hey Beef Rub. My Beef Rub is a salt and pepper-based rub that adds lots of amazing flavor to beef and vegetables. If you dont have any Beef Rub, no worries! You can season these potatoes with 2 teaspoons salt and 2 teaspoons fresh cracked black pepper!

    Thats it! No fancy ingredients or special trips to the grocery store are needed! Now all you need to do is grab some wood, light the smoker, and get to cooking.

    For The Tartiflette Filling

    Cut the potatoes in half and use a spoon to scoop out the flesh, leaving the skin unbroken. Roughly mash the flesh and gently mix in the butter, cream, ham and cheese, and season with pepper and a little salt. Carefully spoon the mixture back into the potato skins. Cook in the EGG for 1015 minutes until golden and bubbling at the top.

    Serve immediately, sprinkled with the parsley, perhaps with a little Dijon mustard and cornichons on the table.

    Baked Potatoes On The Grill Ingredients:

    • 4 baking potatoes, washed and dried
    • Olive oil
    • Fresh cracked black pepper
    • Granulated garlic

    Im not listing any amounts here because I dont ever measure anything with this recipe. I simply coat. Youll understand in a minute.

    Start off by drizzling or brushing olive oil over the baking potatoes:

    Then hit the tops of the potatoes with the salt, pepper and granulated garlic:

    Next, prepare the grill for two zone or indirect grilling. In this case, I have my kamado grill set up with the plate setter in between the fire and the grill grate and a chunk of peach wood on the Rockwood Lump Charcoal. For a more traditional grill, put coals on one side and the potatoes on the other. Target temp is 300 degrees.

    I place the potatoes seasoned side down on the grill:

    Then I hit the tops with salt, pepper, and granulated garlic to coat evenly:

    Close the lid and let the heat and smoke work their magic. Now, dont head inside and clean off that plate with the remains of the oil, salt, pepper and garlic. Thats flavor gold right there:

    Keep this oil and seasoning around. When the potatoes start to feel soft, which requires a squeeze and can be pretty hot so be careful, drizzle the remaining oil and seasoning on the potatoes:

    How long before they start to get soft? About 45 minutes depending on the heat of the fire and the size of the spuds. Dont bother flipping them over, just move them around if one is cooking faster than another, otherwise dont move them.

    Now its time to season your meat generously on all sides before smoking.

    When it comes to a pork rub, we like to use a rub that has a mix of salt with brown sugar and a kiss of heat.

    Consider using your favorite pork rub or make a homemade rub. Our Pork Rib Rub recipe is perfect with this smoked pulled pork dish.

    The goal is both flavor and to enhance the moisture of the meat so season liberally!

    Should you put your rub on your pork butt the night before you smoke it or the same day? This is debated by many.

    Normally for beef, specifically in our tutorial on how to smoke an Omaha Steaks prime rib, we recommend letting the rub permeate the meat overnight.

    This is usually our stance on beef. For this pork butt, rather than curing the pork by leaving the rub on for a longer amount of time, for this Big Green Egg pork butt we simply added the rub while preparing and heating up the smoker.

    Rosemary Salt Side Note

    Not sure where to stick this, so here we are! When we first started making this recipe more than a decade ago we would add fresh rosemary leaves. The rosemary added some decent flavor and smelled great, but the leaves ended up being more like pine needles from a live Christmas tree you find in the rug in February than something youd want to eat.

    For years we simply skipped the rosemary, and we still do most of the time. Recently, Ive started using our spice grinder to create a rosemary salt. We used the linked one, but there are plenty of other options. To create rosemary salt place the leaves of a few sprigs of fresh rosemary in a grinder or small food processor and add a few tablespoons of kosher salt. Pulse until the rosemary is finely blended with the salt. Using this in place of standard kosher salt will give you the rosemary flavor without the bleeding gums.
