There are many potatoes to choose from at the market. When youre looking to make a great smoked baked potato youll definitely want to use a russet potato. The thick skin and high starch content is perfect for baking.

The only other potato Id recommend for baking would be a sweet potato.

The Twice Baked Potato Filling

While the smoked potatoes cool, you can start mixing up the rest of your twice baked potatoes filling. Youll need to chop up the bacon and add all but a pinch or two to a bowl along with the roasted garlic cloves, parsley or chives, shredded cheese, salt and pepper, and fat free Greek yogurt.

That last ingredient is the secret to having low fat, high protein twice baked potatoes. Youll never miss an ingredient like sour cream thanks to the cheese inside the filling, but youre more than welcome to use full fat sour cream or something like the cream cheese in our Traeger smoked mashed potatoes.

You can play around with the filling ingredients for your twice baked potatoes. If you wanted more garlic, go right ahead with a second roasted bulb. Want a more ranch like flavor profile? Incorporate some dill and onion powder.

How about spicy twice baked potatoes? You could smoke some jalapeño peppers and work those in along with some chili powder. Have fun!

Why Pierce Potatoes With A Fork

Piercing or poking potatoes with a fork before smoking or baking allows steam from inside the potato to escape, giving you a light and fluffy baked potato. It also reduces the risk of the potatoes bursting on your smoker or grill. We recommend piercing each potato 8-10 times, evenly across its surface.

So what kind should you choose? Well, heres what Ive learned after experimenting and researching online.

Russets: These are the most popular potatoes for smoking and baking. They are different-sized potatoes with thick, rough skin. It is a high-starch potato that goes well in pureed soups, potato salads, and makes great french fries!

Waxy potatoes: These are characterized by their thin, papery skin that is extremely easy to peel. Red potatoes fall into this category. Waxy potatoes are best used in soups, gratin, potato salad, and etc. They are not the best choice when you want a classic-backed potato with all the toppings.

Yukon Gold Potatoes: Are incredibly versatile potatoes that are great for soups, chowders, roasting, and sauteeing. It is similar to a Russet potato, except its flesh looks pale yellow. They are also more rounded-shaped than Russets.

What Kind Of Potatoes Are Best For Grilling

Before you get started on your grilled baked potatoes, let first talk about which potato is the ideal type.

Well, there is no hard and fast rule when it comes to baked potatoes. You can pick the type you prefer, but there are a few options that, according to some, taste better.

  • Russet This would be a good choice if you want a huge filling baked potato. It has a gritty texture and is ideal for making baked potato on a pellet grill.
  • Red potatoes These could be extremely flavorful, but can turn out to be slightly stiff for baking.
  • Gold potatoes It is a good pick for baking that gives you a smoother texture. They could work as a great replacement to russet.

How To Make Traeger Baked Potatoes

Traeger Smoked Baked Potato

Potatoes have been a staple in households since, probably the beginning of time. There are so many ways to cook and serve them but this is my favorite way. It takes just a few minutes of prep before you are serving a steaming, golden, crispy side to your meal.

Step 1: Rub the oil all over the potatoes. I generally drizzle the oil on and then rub them down.

Step 2: Season with salt and pepper. Again, you want all the sides coated.

Step 3: Set the Traeger temperature to 250 for about 3 hours. We cook them in an aluminum foil pan right in the smoker like in this photo. The internal temperature of the potatoes needs to reach 205.

Expert Tip: You can just check with a fork to see if they are fork-tender but the temperature method is much more accurate for perfect potatoes.

Never fear! Im a professional at repurposing leftovers into other dishes.

These potatoes would be perfect to turn into a breakfast hash. Just cut them up, toss them on your Blackstone with some onions, green peppers, and garlic.

You could also put them into clam chowder, corn and potato chowder, my ham chowder, this steak and potato pot pie , or in my loaded baked potato salad.

Should I Wrap In Aluminum Foil

Wrapping in foil is down to personal preference. The aluminum foil conducts heat so that baking potatoes have a faster cooking time. However, the skin will remain soft.

The foil also keeps the seasoning on the skin and holds all the fillings intact. It also helps prevent the outside burning on the grill.

So its down to whether you want to cook the potatoes faster or prefer to take a little longer and enjoy a crispier skin.

  • Ranch SeasoningIf you don’t have ranch seasoning it can be left out. Instead, you can mix chopped parsley or your favorite herbsor don’t replace it at all.
  • Half and HalfInstead of half and half, you can use whole milk or cream.I’ll even allow 2%.
  • Garlic Fresh garlic makes all the difference in this recipe. Especially since it’s toasted in the skillet prior to adding it to the filling.

Whats The Best Way To Cook Them

Preheat the grill to medium heat of 225F for 10-15, if not already cooking.Load the hopper with the wood chip of choice any flavor works well with potatoes. So, there is no need to switch if you have your meat smoking already.

Take the seasoned potato, pierce it several times with a fork, wrap it in foil if using it, and place it on the grill grate. Close the lid and let them do their thing.

Potatoes can be cooked at a higher cooking temperature of 375-400F for about an hour. However, cooking slower at 225F for two hours gives the flavor time to develop and the skin to crisp up. It is important to maintain an even cooking temperature over the cooking time.

    How To Make Traeger Smoked Potatoes

    Step 1 | Bake Potatoes: Scrub potatoes with a vegetable brush and either bake in the oven or in an Instant Pot.

    Meanwhile, fry bacon in a cast-iron skillet along with the unpeeled garlic cloves. When the bacon is crisp and the garlic is toasted, remove both and drain on paper towels. Crumble the cooled bacon and peel the garlic.

    Step 2 | Carve Potatoes: When the baked potatoes are cool enough to handle, slice them in half on a cutting board and scoop out most of the flesh, leaving approximately ¼” thickness all around. Brush the potatoes with some of the bacon fat, then broil on low for 5 minutes or until the potato skins are golden brown around the edges and slightly crispy.

    Tip:Broiler temperatures can vary. Keep a close eye on the potato skins to make sure they don’t burn.

    Step 3 | Prepare Filling: Add the potato flesh to a medium-sized bowl and mash with a fork or a potato masher . Add ranch seasoning, salt, black pepper, sour cream, half and half, and half of the shredded cheese. Run the garlic through a garlic press and add to the bowl along with ½ of the bacon crumbs. Mix thoroughly until combined.

    Step 4 | Fill Potato Skins: Spoon the potato filling mixture into the potato skins. Top with the remaining shredded cheese and bacon bits.

    Step 5 | Smoke Potatoes: Preheat Traeger or Pellet Grill to 450-degrees F. Add prepared potatoes and smoke for 15 minutes, or until the filling is cheesy and bubbly.

    How To Make A Traeger Baked Potato

  • Preheat Traeger to 225 degrees F.
  • Wash the potatoes and dry them completely. Brush olive oil over the entire potato, then season all sides with the Santa Maria seasoning.
  • Place the seasoned potatoes onto the Traeger and smoke for about three hours, or until soft and fork-tender.
  • Carefully remove from the Traeger and serve with your favorite toppings.
