Probably my favorite thing about baking bacon versus pan-frying is how easy the clean-up is.

As the bacon bakes, the grease will drip down onto the foil-lined baking sheet. You can opt to save your bacon grease to cook with or discard the grease in the trash.

Remember to NEVER POUR BACON GREASE DOWN SINK DRAIN!! This is a sure-fire way to end up with a clog at some point, as grease hardens as it cools.

The correct method for discarding bacon grease is to allow the grease to cool fully and harden and then discard with the foil in the trash.

Alternatively, you can allow the grease to cool slightly and then pour the grease into a metal can or glass jar. DO NOT use plastic, or the grease will melt the plastic. Once the grease has hardened you can scoop it out of the jar and discard it in the trash. Or you can store the jar under the sink and add to it every time you make bacon. Once the jar is full, discard the entire jar.

For Sandwiches And Burgers: Between Two Baking Sheets

For this method, I line a rimmed baking sheet with parchment paper, place bacon on top of it, top with another sheet of parchment, then place a second tray on top before throwing it all in the oven. This technique results in extremely well-rendered and evenly browned and crisp baconkeeping it flat means the bacon is essentially shallow-frying in its own fat the whole timeas well as bacon that lies completely flat. The only downside is that, because evaporation is inhibited, it takes longer to crisp, about 25 to 30 minutes.
