What Is Just Egg
JUST Egg is a vegan egg substitute made from mung beans. It comes in a liquid form, so its sold in the refrigerated section next to liquid eggs.
Hens eggs are notoriously high in cholesterol. Since JUST Egg is cholesterol-free, its touted to be a healthier alternative to eggs.
If you take your eggs scrambled, youre in luck. JUST Egg is best used to mimic scrambled eggs as opposed to sunny side up, poached, boiled, etc. It can also be used as an egg replacement for baking.
Why Buy Vegan Eggs
Chickens bodies are exploited for egg production
The benefits of opting for a plant-based Benedict range from improved health to reduced carbon emissions.
Healthwise, new research has shown that eggs are not good for us, which contradicts the egg industrys widespread claims. Chicken eggs are high in cholesterol, with a single egg containing 373mg of the substance, which has been linked to health conditions such as heart disease and stroke. To put this in perspective, thats more than twice what youd find in a Big Mac. On the other wing, the JUST Egg is cholesterol-free.
Research into the health benefits of eggs is increasingly showing that their consumption is linked to conditions such as heart disease and diabetes. A study published in Atherosclerosis reviewed 14 studies into eggs and concluded that people observed eating high numbers of eggs had a 68 percent increased risk of developing diabetes.
Environmentally speaking, chicken eggs require considerably more land, more fuel, more water and more financial input than vegan counterparts.
According to publication The New Food Economy, a box of a dozen eggs requires four pounds of feed, 636 gallons of water, and a discomforting amount of antibiotics to produce.
Male chicks are typically killed shortly after hatching
Nabati Plant Eggz Review
The first product I tried with my Vietnamese egg omelette recipe was the Nabati Plant Eggz liquid. It is lupini and pea protein isolate based, and is also gluten-free, pareve, and does not contain nuts.
At $6.99 CAD per bottle, it is about $4.92 CAD per 1 cup of liquid
Flavourwise, it is probably the most eggy in flavour compared to the Simply Eggless and the JustEgg. I didnt find this beany in texture or flavour at all, and I found the end result was creamier than the JustEgg and the Simply Eggless. Because it has a creamier texture, it takes a bit longer to set up in the pan

What Is Just Egg And Is It Vegan
JUST Egg is made from mung beans. It tastes, cooks, and scrambles like an egg should.
There is a slight controversy about JUST Egg being vegan. On the JUST Egg website, you wont find any claims about their product being vegan. They call themselves plant-based. On the label they do disclose that JUST Egg is made in a facility that uses eggs so if you have an allergy, do be aware.
Perhaps the larger controversy though is that some of the ingredients may have been tested on animals to gain FDA approval. This Reddit post has some good information. Many many products have gone through the same testing requirements.
So is JUST Egg vegan?
Honestly, the rats werent harmed and they knew they werent going to be harmed going into it. Also, if you are an ethical vegan, you can feel good that unlike with chicken eggs, no male baby chicks were killed nor were any egg-laying hens stressed.
There are no animal products in JUST Egg. So read and learn for yourself and make your own choice based on your ethics. But be aware that most of the other vegan products in this recipe or in the vegan dishes you may order in restaurants likely had to go through the same approval process.

Tips For Using Just Egg
- Use a non-stick pan.
- Add a bit of oil or cooking spray to the pan before adding the egg mixture.
- Be patient with the product as its cooking in the pan. Dont scramble it up too much, unless youre making a scramble.
- Be aware of the serving size. One serving is 3 tablespoons.
- Add black salt, or Kala namak to your dishes to give them an eggy flavor.
- Whisk your ingredients such as onions, vegan cheese, and kale in a bowl with the liquid eggs before you pour the contents into your non-stick skillet to cook. This will help incorporate the vegetables into the recipe.
- If you want your recipe to have a more yellow color add a sprinkle of turmeric.

Vegans have been defying culinary norms for years by using alternatives like tofu to trick their taste buds. The one animal product thats late to the vegan game: eggs. Enter JUST Egg.
Plant-based food companies are stepping up their game. In recent years, weve seen bleeding burgers, meat-like sausages and dozens of non-dairy milks. But few have succeeded in making a plant-based egg alternative that actually tastes like eggsuntil now. The newly-launched JUST Egg has shocked vegans and meat eaters alike.
How did they make plants taste like eggs? Lets find out.
What Happens If You Put An Egg In The Oven
Depending on the type of oven, an egg can explode and leave you running for your life. If you put an egg with its shells in the microwave, steam will build up faster inside and cause it to burst.
Besides the blasting noise, your bursts of steam will leave your kitchen a ton of mess to clean!
The golden rule for microwaving your eggs is to break the shell to prevent exploding.
In a toaster oven, it is different. You dont have to worry about explosions. Pop your eggs in the toaster oven to get that perfect hard-boiled outcome. The shells will come out intact without cracks.
In addition, the interior will be well cooked. To achieve this outcome, you have to set the toaster oven at 325 and 350 degrees Fahrenheit. If you love the soft yolks, you can cook for fewer minutes.

Does Just Egg Taste Like Real Eggs
Vegans, non-vegans and even professional chefs have all praised the JUST Egg for its realistic taste and texture. It cooks up like scrambled eggs, but can it fool a scrambled egg enthusiast? Probably not, but that doesnt mean its not delicious.
Like real eggs, the JUST Egg needs to be jazzed up. The founders recommend cooking it with butter and milk like you would with real eggs. Vegans can, of course, use plant-based butter and milk.
Baked Eggs With Veggies:
Youll need the same ingredients as the basic eggs above, plus:
- Olive oil For sauteing the veggies. Any other cooking oil, such as avocado oil, also works great.
- Spinach Were using frozen spinach, which makes it extra convenient, but its also fine to use fresh. Thaw and drain spinach well.
- Garlic Use fresh garlic cloves for best flavor or jarred garlic for convenience.
- Mushrooms I like using cremini mushrooms, but you can use any variety.
- Onions I used white onions, but you could also use yellow or red onions.
- Sun-dried tomatoes Chopped or julienned. Make your own sun-dried tomatoes, or buy them for convenience.

Cost Per Serving: 12 Fluid Ounce Just Egg Bottle
JUST Egg’s serving is 3 Tablespoons, so it isn’t costly as an egg replacer for baking. For instance, 1 fluid ounce is equivalent to 2 Tablespoons. If you plan to make a vegan omelet, though. which requires ½ cup, or of the container, its a pretty pricy omelet.
JUST Eggs motto is Our ingredients are JUST. Even though I eat some processed foods, I am apprehensive about ingredients I cant pronounce or dont know what they are. So, lets look at the ingredients a little closer.

- Mashed upon buttered toast. Nothing like keeping it simple.

- Chopped up on avocado toast. This trendy breakfast benefits from the added protein and flavor of an egg.
Baked Eggs in a muffin tin are a huge time and money saver one minute of work saves us the temptation of going to the drive-thru for breakfast.
Not that the drive-thru is a regular thing around here but were easily tempted on busy mornings, and when we make oven-baked eggs, we save a nice chunk of change in the process.

& 12 Omelets And Frittatas
Were counting omelets and frittatas as two separate methods of cooking eggs. However, theyre so similar that they hardly warrant separate sections.
Omelets are an infinitely-customizable variation of traditional scrambled eggs. Omelets are scrambled eggs that are cooked into a stabilized form and filled with all kinds of ingredients including meats, cheeses, vegetables, herbs, and spices.
The omelet is folded back over onto itself, encapsulating the delicious ingredients within. Some people like to broil the top of their omelet after they have folded it over.
A frittata is essentially an open-faced omelet. It is still loaded up with ingredients, but it is not folded over onto itself. See? Completely different.
Do You Need To Use Ramekins
I find that muffin tins are the easiest way to meal prep a bunch of eggs at one time, and they work just as well as ramekins in cooking the eggs evenly. You’ll see many baked eggs recipes calling for ramekins and they do work well in terms of elevating the presentation.
Ramekins are also a little bit easier to clean in terms of just throwing them in the dishwasher afterward, and you can eat your baked eggs with a fork or spoon, and more easily dip toast into the yolks. If you don’t have ramekins at home though , then just use muffin tins!

How Do You Safely Thaw Eggs
So, when use-up time comes, how do you thaw the egg? Treat egg somewhat like meat. You should take it out of the freezer and place it straight in the fridge to defrost. How long it takes will depend on the quantity of egg you have frozen.
If you need to speed up the process, you can run the egg container under the cold tap or immerse it in cold water until it is liquid again. Use it immediately in cooking.
You shouldnt let frozen egg sit on the side until it has defrosted, as bacteria could get into the egg and give you food poisoning when you consume it.
If you notice that a thawed egg smells bad, discard it instead of cooking it, even if you have followed all the directions and it should have been fine to eat. A smell of sulfur is a sign that the egg is old and not suitable for consumption, and you should pay attention to this.
Dont eat a bad-smelling egg just because it should be okay food poisoning isnt worth the risk!
