I’ve listed a variety of different filling ideas in the recipe card but you can add pretty much any ingredient your heart desires! Here are some other filling ideas:

- Seasonings such as chili flakes, Italian seasoning, etc.
- Grated cheese
- Soft cheese
- Any type of deli meat such as ham, bacon, turkey, etc.

Instructions How To Cook Eggs In The Oven
Step One: Preheat the oven to 350º and spray your muffin tin with cooking spray or lightly grease it with shortening.
Step Two: Crack the eggs into the prepared muffin tin. Sprinkle a bit of salt and pepper onto the eggs. Add any optional fillings you want
Step Three: Bake at 350ºF for fifteen minutes. You can cook these a little longer depending on how hard you prefer the yolk.
Step Four: Remove from the oven and let them cool. Use a spoon to scoop out each egg and transfer them into a food storage container. Store them in the fridge for up to five days in an airtight container.

What Is Just Egg And Is It Vegan
JUST Egg is made from mung beans. It tastes, cooks, and scrambles like an egg should.
There is a slight controversy about JUST Egg being vegan. On the JUST Egg website, you wont find any claims about their product being vegan. They call themselves plant-based. On the label they do disclose that JUST Egg is made in a facility that uses eggs so if you have an allergy, do be aware.
Perhaps the larger controversy though is that some of the ingredients may have been tested on animals to gain FDA approval. This Reddit post has some good information. Many many products have gone through the same testing requirements.
So is JUST Egg vegan?
Honestly, the rats werent harmed and they knew they werent going to be harmed going into it. Also, if you are an ethical vegan, you can feel good that unlike with chicken eggs, no male baby chicks were killed nor were any egg-laying hens stressed.
There are no animal products in JUST Egg. So read and learn for yourself and make your own choice based on your ethics. But be aware that most of the other vegan products in this recipe or in the vegan dishes you may order in restaurants likely had to go through the same approval process.

Tips For Using Just Egg
- Use a non-stick pan.
- Add a bit of oil or cooking spray to the pan before adding the egg mixture.
- Be patient with the product as its cooking in the pan. Dont scramble it up too much, unless youre making a scramble.
- Be aware of the serving size. One serving is 3 tablespoons.
- Add black salt, or Kala namak to your dishes to give them an eggy flavor.
- Whisk your ingredients such as onions, vegan cheese, and kale in a bowl with the liquid eggs before you pour the contents into your non-stick skillet to cook. This will help incorporate the vegetables into the recipe.
- If you want your recipe to have a more yellow color add a sprinkle of turmeric.

Does Just Egg Taste Like Real Eggs
Vegans, non-vegans and even professional chefs have all praised the JUST Egg for its realistic taste and texture. It cooks up like scrambled eggs, but can it fool a scrambled egg enthusiast? Probably not, but that doesnt mean its not delicious.
Like real eggs, the JUST Egg needs to be jazzed up. The founders recommend cooking it with butter and milk like you would with real eggs. Vegans can, of course, use plant-based butter and milk.
Baked Eggs With Veggies:
Youll need the same ingredients as the basic eggs above, plus:
- Olive oil For sauteing the veggies. Any other cooking oil, such as avocado oil, also works great.
- Spinach Were using frozen spinach, which makes it extra convenient, but its also fine to use fresh. Thaw and drain spinach well.
- Garlic Use fresh garlic cloves for best flavor or jarred garlic for convenience.
- Mushrooms I like using cremini mushrooms, but you can use any variety.
- Onions I used white onions, but you could also use yellow or red onions.
- Sun-dried tomatoes Chopped or julienned. Make your own sun-dried tomatoes, or buy them for convenience.

Prepare the crust and preheat oven
- Preheat the oven to 350 degrees F.
- Let the puff pastry thaw according to package instructions. This usually takes 15-20 minutes.
- When it’s thawed, press into a 9 inch pie plate. Set aside.
Prepare the fillings
- Chop all the vegetables. Place the red pepper, mushrooms, broccoli and cheese in the pie plate lined with the puff pastry. Set aside while you prepare the “eggs”.
Make the JUST Egg mixture and bake
- In a medium bowl, whisk together the JUST Egg, flour, baking powder and salt.
- Pour over the vegetables in the pie plate, and place the halved cherry tomatoes on top, evenly.
- Bake for 35-45 minutes until the center is set. Let cool for 5-10 minutes.
- Slice, serve and enjoy. The quiche will keep for 2-4 days covered in the refrigerator.

JUST Egg’s serving is 3 Tablespoons, so it isn’t costly as an egg replacer for baking. For instance, 1 fluid ounce is equivalent to 2 Tablespoons. If you plan to make a vegan omelet, though. which requires ½ cup, or of the container, its a pretty pricy omelet.

Variations On The Oven
Not sure how to serve up these baked eggs? Here are a few easy ideas for you to try out.
- Diced with pre-made rice and salsa. Its like a little breakfast burrito bowl that comes together in about a minute!
- Mashed upon buttered toast. Nothing like keeping it simple.
- In a bowl with sliced red peppers, cucumbers, and tomatoes.
- With mix-ins like sautéed mushrooms, onions, and peppers or any combination of your favorite omelet ingredients. Cooked for twenty minutes oven-baked eggs with mix-ins are like mini-omelets.

How Do You Safely Thaw Eggs

If you need to speed up the process, you can run the egg container under the cold tap or immerse it in cold water until it is liquid again. Use it immediately in cooking.
You shouldnt let frozen egg sit on the side until it has defrosted, as bacteria could get into the egg and give you food poisoning when you consume it.
If you notice that a thawed egg smells bad, discard it instead of cooking it, even if you have followed all the directions and it should have been fine to eat. A smell of sulfur is a sign that the egg is old and not suitable for consumption, and you should pay attention to this.
Dont eat a bad-smelling egg just because it should be okay food poisoning isnt worth the risk!
