Baked Chicken Thigh Method: With Oil

  • Timing: 30 minutes
  • Rating: 6.5/10

About this method: I was curious to find out whether adding some extra fat would result in even crispier skin, so I did a side-by-side test of this version with oil and the no-oil method above. For the oil version, I seasoned the thighs with salt and pepper and rubbed each thigh with about 1/2 teaspoon olive oil before cooking it in a 450°F oven for 30 minutes.

Results: The skin was slightly browner and a tad crispier than the version without oil. I took several bites, comparing it to the oil-less version. To be honest, the difference was very slight. Was it better? Yes, but if youre looking to cut down on added oil, you probably will be just as happy with the no-oil version.

How Do I Keep My Chicken From Drying Out In The Oven

To start, brine your chicken in a mixture of water and a few tablespoons of salt for about 20 to 30 minutes. This will boost the natural flavor and moisture of the chicken breasts and will leave you with a super tender piece of meat. This is the one step that will really ensure your chicken wont be dry or tough.

Easy Oven Baked Chicken Thighs

One of the tricks to this easy dinner is using bone-in chicken with the skin still on. This keeps the juiciness inside the meat where it belongs. And since the thighs are dark meat, they are more tender and juicier than other cuts of meat, making this recipe may end up being your favorite simple chicken recipe.

How To Reheat Chicken Without Drying It Out

There are a couple different options when it comes to reheating chicken, the most common ways are in the oven or in the microwave.

  • In the oven: Preheat your oven to 325 F degrees and line a baking sheet with aluminum foil. Place the chicken in the centre of the aluminum foil and pull the sides up to completely wrap the chicken in the foil . Cook until internal temperature reaches 165 F degrees.
  • In the microwave: Place the chicken into a microwave-safe dish. Again you can brush the chicken with olive oil to help the chicken stay moist. Cover the dish with microwave-safe plastic wrap and cook for 2 3 minutes at a time, until internal temperature reaches 165 F degrees. If youre using regular plastic wrap dont let it touch the chicken as it can transfer chemical to the meat.

    1 teaspoon garlic powder

    1 teaspoon paprika

    How To Make This Recipe:

These one-pan, wonders are first pan-seared on the stove for about ten minutes. Then, they finish cooking in the oven. Generally, it takes about 30 minutes at 375 degrees F. to come up to a safe internal temperature of 165 degrees F.

When checking to see if its done, be sure to insert your meat thermometer in the thickest part of the meat, not touching the bone.

The size of chicken pieces varies widely these days, and actual oven temperatures can vary by 25-50 degrees. Thats why it is important to use a meat thermometer to know for sure when the chicken is done. If your pieces are larger or smaller than eight ounces, your cooking time may be more or less.

    Compound Butter Underneath The Skin:

Butter underneath the chicken skin keeps the chicken super juicy and adds loads of flavor, while the skin protects the butter and fresh herbs from the high heat of the oven.

    • Butter I prefer grass-fed butter for nutrition and flavor, but you can use any unsalted butter.
    • Garlic Use whole garlic cloves, because we are going to crush them.
    • Fresh Herbs Fresh parsley and dill.
    • Sea Salt

The Secret To Super Juicy Chicken Thighs Is Tempering

Tempering is just taking the chicken out of the fridge and letting it sit on the counter in a cool spot. It will give you the juiciest, most properly cooked chicken youll ever eat. Taking the chill off your chicken equals evenly cooked meat. If you cook chicken straight from the fridge when its cold, the outside of the chicken will cook faster than the inside, giving them potential to dry out.

The best thing to do is prep your chicken, let them temper/marinate for about 10-15 minutes, then turn on the oven. Your chicken should be tempered by the time your oven is ready.

  • Preheat: The first thing to do is to preheat your oven to 400 degrees F.
  • Prepare: Meanwhile, spray a baking dish with a light coat of cooking spray.
  • Prep the chicken: After patting each piece with paper towels to get all the moisture off, brush them each with oil.
  • Mix: Then, mix the seasonings together in a small bowl as your spice rub.
  • Rub: Sprinkle with the spice, giving it a rub to make sure it is spread all over each piece before putting them in the baking dish.

  • What Temperature To Bake Chicken Thighs

I recommend baking chicken thighs at 450 degrees F, because the high temperature will make the skin super crispy and the inside juicy. You can also bake them at 400 or 425 degrees F, but it will take longer.

I actually dont recommend oven baked chicken thighs at lower temperatures like 350, or even 375. Not only does it take longer, but in my testing the meat was less tender and the skin less crispy.

How Do You Keep Chicken Thighs From Drying Out In The Oven

For baked thighs with crispy skin outside and juicy meat inside, be sure to pat the chicken dry with paper towels and spritz it with a tiny bit of olive oil. Also, use bone-in chicken with skin to get the juiciest thighs. Boneless thighs tend to get dried out faster.

In addition, do not forget to bake them with the skin side up on a sheet pan at a high temperature, and do not flip them or move them as they cook. If you want, you can sear the meat first on a hot skillet to make it extra crispy outside. The crispy skin will keep the moisture inside.
