These no-bake chocolate peanut butter truffles are one of my favorite “candy” recipes to make and share. Not only are they super simple to prepare, everyone loves them. Plus, you can make these any time of year to share or just eat as a special treat all for yourself!

Yes, you can keep these truffles in the freezer at two different steps of making the recipe. First, you can freeze the peanut butter truffles before dunking in chocolate for up to one month in an air-tight storage container. Or, you may freeze the finished product in an air-tight container for up to one month as well. I would hold off on the chopped peanuts as garnish if they’re going to be frozen in their final state, just so they don’t become soft when they thaw.

    One thing to remember about homemade truffles. The chocolate is not tempered. this means the truffles will melt easily at room temperature.

    How to Make NO BAKE Peanut Butter Cup Truffles

    Add in the confectioners sugar and stir until well combined. Set the saucepan aside and allow the mixture to cool for 10 minutes. Next, add the Rice Krispies Cereal, the chopped peanuts, and the chocolate chips. Fold into the peanut butter mixture until well combined. Cover and refrigerate for 30 minutes.

    When firm, measure out a tablespoon of the mixture. Roll into balls and place on a parchment-lined baking tray. Once all of the balls are rolled, place the baking tray in the fridge for 2 hours. Its always best to dip truffles into chocolate after they have had some time to chill in the fridge. If the mixture is too soft, return it to the fridge for a while longer.

    How To Make Crispy Peanut Butter Truffles:

    Lets just get this one thing out of the way first, because Ive said this in every truffle post in this series. But, its important and worth repeating! Even though truffles are super easy to make, they do require a little bit of patience. Im speaking of course about the time it takes for the truffle mixture to set up in the fridge before they can be rolled into balls. Its one of the things I hate the most when it comes to baking! I cant tell you how many times I refuse to make a recipe because I have to wait for something to chill. I have no patience, I tell you! Ha! This recipe needs at least two hours of refrigeration time!

    Now that Ive made you aware of that, lets prepare the truffle mixture. First, place the peanut butter and butter into a large saucepan. Over very low heat, stir the butter and peanut butter together until melted together. DO NOT attempt to do this quickly over high heat. Low heat is the best way to go to avoid scorching the peanut butter. Once they are melted together, remove them from the heat.

    How To Make No Bake Chocolate Peanut Butter Bars

  • Step One: Combine melted butter, powdered sugar, graham cracker crumbs, and peanut butter in a large bowl. Mix until well combined.
  • Step Two: Spread the mixture evenly into the bottom of a prepared 8×8 baking dish, which has the foil or parchment paper lining overhanging on the sides.
  • Step Three: In a medium microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until melted and smooth. Spread the melted chocolate in an even layer over the bottom layer. Use an offset spatula to spread it across.
  • Step Four: Transfer the dish to the fridge to allow it to chill and set it for 1 hour until firm.
  • Step Five: Remove the bars from the pan and carefully slice into 16 bars. Enjoy!

    • Butter: Use salted butter or unsalted butter. You wont notice.
    • Cream Cheese: Soften the cream cheese to room temperature before beginning.
    • Peanut Butter: Use a smooth peanut butter or a chunky peanut butter. Your choice.
    • Powdered Sugar: Confectioners sugar adds flavor and a softness too.
    • Melting Chocolate: You will need two different types of melting chocolate or almond bark.

    Pro Tips:

    • Do not use chocolate chips as they do not melt the same at all.
    • If you have a peanut allergy you can also substitute with almond butter or cashew butters.
    • White chocolate, milk chocolate, semisweet chocolate, or dark chocolate. You cant go wrong.
    • Melt the butter in a small microwave-safe bowl in small second intervals.

    This recipe will come together in just a few steps and a bit of chill time. Then sit back and watch how quickly these little balls disappear!

    Step 1: In a large bowl with hand mixer, mix the peanut butter, softened butter, and vanilla on medium speed until well combined. You can also use a stand mixer with a paddle attachment.

    Step 2: To the mixture, add powdered sugar and graham crackers crumbs to the peanut butter mixture, then stir until well blended.

    Step 3: Use a small cookie scoop to scoop out about 1 Tablespoon of dough and use your hands to roll them into smooth 1-inch balls.

    Step 4: Place them in a single layer on a baking sheet lined with parchment paper or wax paper then transfer them to the fridge for 30 minutes to chill.

    Step 5: In the meantime, place the white chocolate in a microwave-safe shallow bowl and heat for 30-second increments, stirring in between. You should only need 1 minute and a half at most, otherwise, it might burn. Stir until melted completely.

    Step 6: Take the truffle balls out of the fridge and quickly start dipping them one at a time into the melted chocolate one at a time. Use a fork to dip balls and then tap it on the side of the bowl to allow the excess chocolate to drip off. Use a toothpick to carefully roll it back onto the parchment-lined baking sheets.

    Step 7: Place the remaining white chocolate into a piping bag and use that to drizzle over the truffles, then immediately top with festive sprinkles. Refrigerate for 15 minutes to set.

    • Powdered sugar Powdered sugar sweetens the truffles and gives them structure. If the truffles are too wet while rolling, feel free to add a bit more powdered sugar to the dough to achieve your desired texture.
    • Graham cracker crumbs Graham cracker crumbs add a bit of crunch to the truffles. They also help give the truffles structure without adding extra sweetness.
    • White chocolate bark Im using white chocolate bark to cover the truffles but regular chocolate bark will work too! Just make sure to temper the chocolate properly if you want to use regular chocolate and not chocolate bark.

    What is a holiday truffle countdown without one that has peanut butter in it? Crispy Peanut Butter Truffles were one of my favourites in this entire series. I absolutely love peanut butter, so thats probably why. But, I also liked the contrast of the creamy peanut butter and the melted chocolate with the crispiness of the Rice Krispies cereal. These are just so easy to make and so delicious!

    Oftentimes, these are referred to as Peanut Butter Balls, but to me, theyre a truffle. If I have to roll a mixture into balls and refrigerate it before rolling it into balls and then dipping it into melted chocolate, then its a truffle! But, unlike most truffles that are soft in the center, or can be completely dissolved on the tongue, these have Rice Krispies Cereal, chopped, salted peanuts, and chocolate chips stuffed into them.

    Lets jump right into what you will need to make these truffles, but first, lets just talk about this truffle series. Today is the twelfth and final recipe in Lord Byrons 12 Truffles of Christmas series. Id like to say that I saved the best for last, but thats not the case at all.     These 7-ingredient no bake peanut butter truffles easily fall into our easy recipes category, and you probably already have all the ingredients on hand.

    We used creamy peanut butter in this recipe, but you can also go with chunky if you prefer that. I kept the creamy because we put chopped peanuts into the truffle with the peanut butter filling, and I didn’t want it to be too crunchy.

    Tips For Making Truffles

    Get ready to devour these chocolate

    Use a small cookie scoop or melon baller to scoop the dough into even sizes before dipping.

    If you have trouble dipping your peanut butter balls into the chocolate without them crumbling apart, freeze the balls for 30-minutes to 1-hour before they are dipped.

    Use two forks to dip the balls into the chocolate so that one can hold it steady and the other moves it around to make sure all areas are coated.

    Another option is to use toothpicks inserted into the balls to dunk them completely in chocolate then easily remove them once place onto the parchment paper.

    The Perfect Dessert For Any Occasion

    I love to decorate with sprinkles, and these truffles are perfect for pretty much any holiday. I am going to show you the every day version and I have also made a Christmas Truffle version to show you how versatile they are.

    Here are some other ways you can decorate the truffles for other holidays too!

    Christmas: Sprinkle with Christmas sprinkles. Melt some additional white chocolate and use some red and green food coloring and drizzle over the white chocolate truffles.

    Valentines Day: Sprinkle with red and pink sprinkles or Valentines Day themed sprinkles. Drizzle with red and pink chocolate. You can also change the white chocolate to milk chocolate

    Halloween: Drizzle with orange-colored chocolate and sprinkle with Halloween themed sprinkles.

    How To Make Peanut Butter Chocolate Truffles

    • natural peanut butter no stir
    • powdered sugar or powdered erythritol for keto
    • butter or vegan butter for dairy free
    • vanilla extract
    • flaky sea salt for topping
    • Mix together the peanut butter truffles. In a small pot, stir together the peanut butter, butter, and vanilla over low-medium heat until melted and smooth. Add in the powdered sugar and stir until incorporated. Let the mixture cool to room temperature.
    • Place them on a baking sheet and chill. Use a cookie scooper to make 20 evenly sized balls and place them on the pan lined with parchment paper. Return to the freezer while you prepare your chocolate.
    • Cover each peanut butter ball chocolate. Drizzle chocolate over each ball or dip each ball in the chocolate using a fork to let the excess drip. Finish with flaky sea salt and return to the freezer until chocolate has set.
