    EASY BAKE BBQ CHICKEN TENDERS | Richard in the kitchen

    YIELD:Makes 4 servings

    2 lbs. -skinless, boneless chicken tenders

    1/2 cup -BBQ sauce

    2/3 cup -whole wheat flour

    1/3 cup -milk

    2 1/2 cups -whole wheat Panko breadcrumbs

    1/2 tsp. -salt

    Preheat oven to 400 degrees.

    Cover baking sheet with parchment paper.

    In large bowl, mix flour and panko together with salt and pepper.

    In another large bowl whip together BBQ sauce, milk, eggs and honey.

    Dip tenders in BBQ/milk mixture and generously roll the chicken tenders in the Panko mix. Place the chicken strips on the baking sheet. Bake for 10 minutes. Flip tenders over and allow it to bake until cooked through and outside is crisp, about 10 minutes. Cook chicken tenders longer if you want more brown.

    Start by preheating your oven to 400F and lining a baking sheet with parchment paper. In a medium size bowl add chicken strips and flour and coat chicken completely. Next, stir together lightly crushed corn flakes, salt, pepper, garlic powder, and paprika in a medium size bowl. In a small mixing bowl add 3 eggs and milk and whisk together.     • For even cooking, make sure the chicken breasts are the same thickness throughout. You may need to pound some of the breasts to create an even thickness. The breasts should be around 1 inch thick.
    • Use the parchment paper. It’s a lot easier to clean up than scrubbing caramelized BBQ sauce off the sheet pan.
    • Be careful with cross contamination from the chicken. Once you brush the chicken with the BBQ sauce the pastry brush is contaminated. If you put that brush back in the bowl of sauce, the sauce is now contaminated and can not be eaten unless it is cooked.
    • Use an instant read thermometer so you don’t overcook your chicken. Cook chicken until the thickest part reaches 160°F and then let it rest for 5-10 minutes.

    • Make Ahead: You can prep the chicken up to a day in advance, just be sure to cover it tightly and let it come to room temperature while your oven preheats.
    • Storage: Store leftovers in an airtight container in the fridge for up to 2-3 days after cooking. Reheat in the microwave or use leftovers for salads, sandwiches and wraps. To freeze, cool completely then place in resealable freezer bags for up to 6 months. Thaw in the fridge.

It will go up about 5 degrees once you let the meat sit on the counter after baking for 5-6 minutes or so.

    These baked BBQ chicken tenders is a simple recipe using a small handful of ingredients you likely already have available in your kitchen. Let’s take a look at them:

    • Chicken Tenders – I buy the boneless skinless chicken tenders. They usually come in packs of 1 or 2 pounds. This recipe is for one pound, but you can scale it up as needed to fit the size of your group. Most chicken tenders will come with a white tendon visible on the end. This tendon is edible but can be quite tough and chewy when cooked, so I usually use a sharp knife just like the ones included in the best butcher knife set and cut it out.
    • Olive Oil – Rubbing the chicken with a little olive oil will prevent it from sticking to the oven rack and will also promote lovely caramelization of the chicken and seasoning rub.
    • Garlic Powder & Smoked Paprika – I like these two seasonings as they pair well with barbecue sauce and are pretty basic pantry staples. I don’t measure how much I use – just give the tenders a light sprinkle.
    • Salt and Pepper – Again, I don’t measure, just sprinkle it on. I typically go light on the salt and a little heavier on the pepper.
    • BBQ Sauce – Use your favorite! I used a smoky, spicy sauce, but this is really a matter of personal tastes, so if you have one you love to use… go for it! You’ll need about of a cup.
