If you have a bigger or smaller roast, no fear! Cooking meat is all about temperature and the goal here is to get your pork to 145ºF.
For a smaller roast, start with 45 minutes and check the temperature every 10 minutes. For a larger roast, add on time to our suggested 75 minutes in 5-10 minute increments.
How Long Should I Cook Pork For
Place the roast on a wire rack inside a baking tray and cook at 240°C until the rind crackles, up to 50 minutes. Turn the oven to 180°C and cook for 30-35 minutes per kg, depending on how well you like your roast cooked. Once cooked, let the roast rest for 10 minutes before slicing.
Sear The Pork Tenderloin
Our main goals with pork tenderloin are to build flavor and not overcook it. Searing the pork tenderloin goes a long way to building flavor! It caramelizes the marinade, creating a delicious golden brown crust on the outside. It also helps seal the juices before you bake it.
To sear the pork tenderloin, grab your favorite cast iron, or another heavy-bottomed, oven-safe pan, add about 1/2 tablespoon of oil, and heat it over medium-high heat. Then, take your pork tenderloin and let the excess marinade drip off, and place it in the pan and sear for about 3-4 minutes, until browned. After 3-4 minutes, flip the pork tenderloin over and sear for an additional 3-4 minutes, until browned. While you can sear it on all 4 sides if you’d like, we find that searing on two sides works just fine!

What Temperature Should Pork Loin Be Cooked To
According to the National Pork Board, it is now safe to eat pork once it has reached 145°F. However, many people grew up in the days where pork needed to be cooked to 160°F. When they see slightly pink pork meat, which is what you get at 145°F, it bothers them. If you are bothered by the slight pinkness, cook yours to 160°F. If that doesnt bother you and you want juicier pork, then cook it to 145°F.

- Youll first need to butterfly the pork and its not as weird as it sounds, trust me. Take a knife starting at one end, insert the knife ¾ of the way into the meat. Make sure not to cut it all the way through, we dont want two separate pieces of pork.

TERIYAKI SAUCE is best when homemade, it has more flavor. The homemade version contains orange juice or pineapple juice, fresh ginger and garlic and a bit of brown sugar. We use soy sauce in this recipe which both adds flavor and tenderizes the meat.
If youre in a pinch, you can certainly use a premade sauce, try to choose one that has a thicker consistency like barbecue sauce. If using store bought, I like to add a little bit of garlic, orange zest, or juice and some sesame oil to the bottled sauce for more flavor.
SESAME OIL Dont skip or substitute sesame oil if possible as it has a unique nutty flavor that is beautiful in this recipe.
