I have experimented with baking sweet potato fries using a variety of methods, and I have found that the following factors have a significant impact on the crispiness of the fries:
Cutting Sweet Potato Fries With A Fry Cutter
You can also use a fry cutter to cut fries! This is only for the most serious of home cooks, because its a uni-tasker and rather large. We got one because we make a lot fries around here! It makes for beautifully perfect fries. Here are some notes:
- Sweet potatoes are more difficult to cut with a fry cutter than russet potatoes. Sweet potatoes are tougher than russets, so they take much more strength to pass through the cutter. We struggled here, but eventually made it work . We dont necessarily recommend using a fry cutter, but it did work.
- The fry cutter works brilliantly for russets and other vegetables. Heres a link to the French fry cutter we use.

Ingredients And Kitchen Tools
To make the basic version, you only need 3 ingredients.
- Sweet potatoes You need a large sweet potato with the eyes cut off and cut it into fry shapes.
- Olive oil Just a little bit. If you want to skip on the oil, you could use cooking spray, or you could use a mister to spray the oil on.
- Spices You could keep it basic with plain old salt and pepper or kick it up with different flavor combinations.

Cut Sweet Potato Fries
Peel the potatoes using a vegetable peeler, if youd prefer, and then cut each potato into fries 4-6 inches in length, ¼-½-inch wide and ¼ inch thick.
Slice in half lengthwise, then place flat-side down on the cutting board and make cuts about ¼-inch apart.
Put these pieces flat-side down and finish cutting potatoes into long, thin strips.

Heres how to slice a sweet potato into fries: Rest your sweet potato on its side on a sturdy cutting board. Working lengthwise, slice off a 1/4 thick slab from one of the sides. Turn the sweet potato onto the flat side so its more stable. It gets easier from there!
Continue cutting the sweet potato into slabs, and then cut the slabs into thin fries. As youre cutting the slabs, youll eventually want to turn the sweet potato onto the now-larger flat side to maintain stability.

- Coat Add the fries to a bag and shake 2 teaspoons of cornstarch on top so you have a thin coating.
- Oil Use canola, grapeseed, sunflower or peanut oil for a crispier edge.
- Extra tip Make sure to line them in a single layer . Flip the fries half way through baking to make sure each side is evenly crisp.
