My chicken breasts were very large here, for smaller chicken breasts please note these times.
- The cooking times for smaller chicken breasts are roughly 25-30 minutes, and 30-40 minutes for medium chicken breasts .
Dont forget to let the meat rest for 10 minutes after pulling it out of the oven.
- Resting allows the juices to be redistributed and reabsorbed before you slice it. If you cut into it straight out of the oven, the liquid will all come out. In other words, youll dry out your chicken. So keep the juice and the flavor in by giving it a few minutes to sit.
- If the internal temperature of your chicken breasts reaches 162°F the temperature will increase about 3-4 degrees during the resting period .
Leftovers make great pulled BBQ chicken sandwiches.
- The next day, reheat and pull chicken apart so its stringy. Put it on toasted brioche buns or pretzel bunswith some extra BBQ sauce. Serve with waffle fries and a salad for a quick meal.
For a deeper barbecue flavor, marinate your chicken.
- Its easy to do this by marinating the chicken with my BBQ chicken marinade recipebefore adding extra sauce and cooking. Essentially, instead of putting the dry seasonings on top of the raw chicken, you take the same spices and put them in a liquid. OK OK, I simplified it slightly. Its actually Dump -> Bake -> Baste -> Broil. The 3 minute broil is how we get the surface really nicely caramelised!
This oven baked BBQ Chicken is deliberately made with a barbecue sauce that is thinned out with water so:
it wont dry out in the oven and
to create enough sauce so the chicken absorbs the flavour as it bakes. We bake the chicken upside for the first half, then flip it for the second half so both sides get the benefit of the flavour, This is why we dont need a rub for this recipe.
And you are going to LOVE the barbecue sauce you end up with in the baking dish! All the juices from the chicken mixes in as you bake it, so you basically end up with a world-class barbecue sauce thats got the benefit of the ultimate home-made chicken stock!
Tips For The Best Oven Roasted Bbq Chicken
- For even cooking, make sure the chicken breasts are the same thickness throughout. You may need to pound some of the breasts to create an even thickness. The breasts should be around 1 inch thick.
- Use the parchment paper. It’s a lot easier to clean up than scrubbing caramelized BBQ sauce off the sheet pan.
- Be careful with cross contamination from the chicken. Once you brush the chicken with the BBQ sauce the pastry brush is contaminated. If you put that brush back in the bowl of sauce, the sauce is now contaminated and can not be eaten unless it is cooked.
- Use an instant read thermometer so you don’t overcook your chicken. Cook chicken until the thickest part reaches 160°F and then let it rest for 5-10 minutes.
- If you are using thinner chicken pieces or chicken cutlets, reduce the cook time so it doesn’t get overcooked, and then check it with thermometer.

Tips For The Best Bbq Chicken In Oven
- This recipe works best with bone-in, skin-on chicken . The bones and skin keep the white meat incredibly moist and juicy in the oven, and add so much extra flavor. Even if you prefer to pull off the skin before eating the meat, I highly recommend cooking the chicken with the skin still on.
- Patting the chicken dry before adding the dry rub helps the seasoning adhere to the meat and makes the skin more crispy. Dont skip that step!
- Line your baking sheet or roasting pan with foil before adding the chicken. This makes clean-up a breeze.
- Since the size and thickness of chicken breasts can vary greatly, I suggest using a meat thermometer to know when your chicken is done. The meat needs to reach an internal temperature of 165°F.
- Scale this recipe to feed a crowd! For our family of 5, I typically bake 3-4 large bone-in chicken breasts . If youd like to feed a larger group, just double the dry rub and bbq sauce so that you have enough to coat more chicken pieces.

I have two and they are the ONLY baking sheets I will EVER use. Theyre super sturdy, so they dont buckle when the temperature changes . And they conduct heat well to make sure that your food is well cooked on the top and bottom, and they are really good at being non-stick, even though they dont have any non-stick coating .
