    The amount of time to roast butternut squash is determined by the size of your butternut squash cubes, as well as the preferred temperature setting.

    So, what is my favorite way to cook spaghetti squash fast? Roast it at a high temperature!

    Many baked spaghetti squash recipes use lower oven temperatures, which take longer. Im impatient! The key is roasting spaghetti squash at a high temp to save time. Most recipes do it at 350 or 375 degrees, but I went as high as 425 degrees to save time.

    The higher temperature does mean youll get a little caramelizing on the edge if youre using the cut-in-half method, but who cares? I actually think its delicious. If you dont like that part, its only on the surface anyway. Totally worth the time savings!

    • Corn meal: plain cornmeal not self rising cornmeal

    One hope I have for this site is that readers learn which squashes are in which clan among the three major squash species: maxima, moschata, and pepo. Once you get to know these clans, youll understand that species has a lot to do with the different squashes taste, texture, and how to cook them. Cucurbita moschatasquashes such as butternut, honeynut, calabaza, and Thai pumpkins are my favorites for the baked squash treatment.

    Among Cucurbita pepo types, sweet dumpling and winter luxury pie pumpkin are tasty baked. Most store-bought acorn and delicata squashes are less sweet and may yield a less wonderful result, or can be deliciously doctored up with butter, maple, sweet spices, or other creative additions.

    Cucurbita maxima includes the dry, flaky, meaty squashes like kabocha, kuri, and turban, which often do better steamed or stewed than baked in a plain way without moist add-ins or fillings. But other C. maxima types such as baby blue hubbard, buttercup, and sweet meat are a little juicier and bake up nicely. Finally, pink banana, candy roaster, and blue hubbard are C. maxima squashes that dont fit in your oven never mind on a baking sheet when cut according to this recipe, but do make a great baked squash when cut to fit!

  • Cut up the butternut squash: Following my easy method, peel and cut butternut squash into cubes. I recommend cutting them in a uniform size as much as possible to ensure even roasting. I like mine to be 1-inch cubes but you can make them slightly larger or smaller to make it work for your recipe.
